This homemade spicy leek and potato soup will help to warm you up in the winter months and whats more it is healthy and can be incorporated into most diet plans.
This is one of my favorite vegetarian soups when I am trying to eat healthily, cut down on the calories and lose weight!
It is a healthy soup recipe which is really easy and quick to make, and cheap too, if you are on a budget, as it doesn't use lots of ingredients. I think that the the addition of chilli makes for a nice, warming lunch or evening meal.

My Homemade Spicy Leek And Potato Soup Recipe
Here are the ingredients you will need to make this healthy leek and potato soup recipe for two servings....

Ingredients
low-fat cooking spray
1 leek, sliced finely
1 medium/large potato(about 100g), peeled and cubed
1/2 finely chopped medium onion
1 clove garlic, grated
1 finely sliced small chilli or to taste (de seeded)
1 vegetable stock cube,
1/2 pint hot water
150 ml skimmed milk
salt and pepper to taste
chopped coriander (cilantro) to garnish

Here's what you need to do to make the homemade leek and potato soup....
Just follow the instructions to make a healthy, spicy leek and potato soup

Take a large saucepan and spray with a low calorie cooking spray such as 'Frylight'. The low fat cooking spray is especially important if you want to really cut down on your calories or you are following a diet plan such as the Slimming World plan as the recipe would then be syn free, on the Green Plan, providing that the milk used was counted as part of your 'healthy extras'.
Heat the pan and gently sauté the leeks, onions, potatoes, garlic and chilli for about 10 minutes or until slightly softened.
Dissolve the stock cube in the hot water and add to the sautéd vegetables.
Bring the mixture to the boil and the reduce the heat, cover and simmer gently for about 15 minutes.
Take a stick blender and blend the soup mixture in the pan for about 20 seconds.

Season with salt and pepper and garnish with a little chopped coriander (cilantro) and serve immediately.

Cooking With Leeks
This homemade vegetable soup recipe wouldn't be the same without them.

The leek is a vegetable which belongs, along with the onion and garlic, to the Alliaceae family.
Leeks are an ingredient of cock-a-leekie soup, leek and potato soup and vichyssoise, along with leek soup.
The edible parts of the Leek are the white onion base and light green stalk which in its raw state is crunchy and firm. Leeks have a mild onion-like taste which some describe as being a mix of mild onion and cucumber.
There are different ways of preparing the leeks:
- Boiled, which turns them soft and mild in taste.
- Fried, which leaves them more crunchy and preserves the taste.
- Raw, for use in salads, doing especially well when they are the prime ingredient.
