Recipe For The Best Potato Casserole from Leftovers

Leftover recipes don't have to be boring. I'll show you how to add a gourmet "touch" to this deliciously-rich potato casserole worth saving leftovers for. Step-by-step instructions and pictures of my special potato vegetable casserole shall make this recipe quick and easy for you to prepare. By the way, this is a truly tasty twist on the traditional green bean casserole recipe!

Serve it as a stand-alone lunch or as a scrumptious side dish with meat or seafood for dinner. Your guests will ask for seconds - so make a big batch!

Leftover Roasters, Bakers, Hashbrowns, Sautes... 

Any potatoes work for this wonderful casserole!

A look at the ingredients of my special potato vegetable casserole:
  • Thinly-sliced Idaho potatoes (raw) and wedges of cooked red potatoes

  • Shredded Gruyere cheese

  • Freshly-browned bacon bits, fat and all!

  • Lots of browned onion

  • Leftover cooked carrots and green beans

  • Creamy white sauce

For the cream sauce:

Combine 2 quarts of heavy cream with 1 Tablespoon each black and white pepper, 2 Tablespoons ground nutmeg, and salt to taste (1-2 Tablespoons). Bring to a brief boil and thicken with a cornstarch slurry (1/2 cup cornstarch dissolved in 1/2 cup cold water). This will be thick and good!

Bacon and onion:

Brown the chopped bacon, drain, and slowly fry thinly-sliced onion in the bacon fat until brown and slightly caramelized.

Make up your own name however you see fit...

This recipe is for a hotel pan, serving 16-24 people. Please adjust it according to your needs. There's a lot of flexibility with such a dish!

The procedure:

Generously butter your pan and distribute the potatoes across the bottom. Sprinkle with a couple of handfuls shredded Gruyere cheese. Add the cooked vegetables, bacon bits, and some more cheese.

Important! Don't substitute anything else for the Gruyere - it might be a bit more expensive than other cheeses but it's absolutely worth it!

Cover the dish with browned onion - a whole lot if you like!

Pour enough cream sauce over the mixture so it covers it all. Sprinkle a generous layer of shredded Gruyere on top.

Baking And Serving This Divine Leftover Casserole... 

The aroma is heaven!

Bake this casserole at 400 degrees F for about 30-45 minutes. Cut into squares and serve with a spatula.

The pictures shows my sauteed salmon fillet, but our fabulous leftover potato vegetable casserole is great with steak, chicken breast, veal, lamb, and many other meat or seafood choices. It's rich enough to provide a meal all on its own, served with a salad.
