Leftover Turkey Soup Recipe
Turkey Noodle Soup Recipe
Ingredients
1 1/2 c. sliced carrots
1 1/2 c. sliced celery
1 1/2 c. cubed potatoes
1 med. onion, diced
1 chicken bouillon cube for every c. of water
2 c. egg noodles
2 c. cooked, diced turkey
Preparation
Put carrots, celery, potatoes, and onions in a large pan. Cover with water, add bouillon cubes, summer savory. Cook on medium heat until vegetables are almost tender, about 20 minutes. Then add egg noodles. Cook for 10-12 minutes more, then add turkey and serve.

Turkey Pot Pie Recipe
Ingredients
Ingredients
1/4 cup butter
1/2 cup chopped onion
1/2 cup chopped mushrooms
1 tablespoon minced garlic
1/3 cup all purpose flour
1/2 teaspoon dried sage
1/4 teaspoon dried thyme
1 1/2 cups prepared turkey gravy
1/2 cup water 1/2 cup milk
1 (14 ounce) package frozen mixed vegetables, thawed and drained
3 cups cooked turkey
cubed salt and ground black pepper to taste (optional)
1 pastry for a 10-inch double crust pie
Preparation
1. Preheat oven to 425 degrees F (220 degrees C).
2. Melt the butter in a large saucepan over medium heat. Stir in the onions, mushrooms, and garlic; cook until tender, but not browned, about 5 minutes. Stir in the flour, sage, and thyme until blended. Pour in the gravy, water, and milk, stirring to blend. Bring to a boil over medium-high heat; cook 1 to 2 minutes. Stir in the turkey and vegetables, and cook until vegetables are tender, about 5 minutes.
3. Line a 10 inch pie plate with the bottom crust. Pour in the turkey mixture. Cover with the top crust. Seal and crimp the edges. Pierce top crust in a few places with a fork. Cover the edges of the pie with strips of aluminum foil.
4. Bake in preheated oven for 25 minutes. Remove foil strips, and bake until crust is golden, about 20 minutes more. Remove from oven, and rest 10 minutes before serving.

Ingredients
1 (16 ounce) package uncooked spaghetti
1/2 cup butter
1/2 cup all-purpose flour
3 cups chicken broth
2 cups milk
1 2/3 cups grated Parmesan cheese
4 cups chopped cooked turkey
Preparation
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
2. Bring a large pot of lightly salted water to a boil. Add spaghetti, and cook for 8 to 10 minutes or until al dente. Drain, and place in the prepared baking dish.
3. Melt butter in a medium saucepan over medium heat. Stir in flour. Mix in chicken broth and milk. Cook and stir until the mixture comes to a boil. Stir in about 1 1/3 cups Parmesan cheese, and remove from heat.
4. Mix chicken broth mixture and turkey with spaghetti. Top with remaining cheese. Bake 1 hour in the preheated oven, until surface is lightly browned.

Leftover Turkey Taco Recipe
Tex Mex Turkey Taco Recipe
Ingredients
¼ to ½ lb. leftover turkey
One packet of taco seasoning (your favorite brand)
Flour tortillas
Monterrey Jack cheese
1 large avocado
Salsa (Picante or your favorite)
Lettuce
Tomato
Sour Cream
Preparation
1. Put leftover turkey in a skillet and add taco mix and water (as per taco mix directions). Let this simmer on low heat until turkey is warmed through and has absorbed the taco flavoring.
2. Smash the avocado; shred the cheese; shred the lettuce; and dice the tomato. Place each in a separate bowl.
3. Spray a griddle or large skillet with cooking spray and, over medium heat, twirl each tortilla on both sides in the griddle until warm and pliant.
4. Spoon turkey taco filling into warmed tortilla and top with cheese, a spoonful of smashed avocado, a spoonful of salsa, lettuce, and tomato. Finish off with a dollop of sour cream.

Leftover Turkey Pasta Recipe
Leftover Turkey Angel Hair Pasta Toss Recipe
Ingredients
1/2 cup olive oil
2 cloves garlic; minced
1/4 cup sliced green onions
3 large tomatoes; peeled and diced
2 tablespoons chopped fresh basil
1 teaspoon salt
1/4 teaspoon coarse ground black pepper
1/2 pound angel hair pasta; uncooked
grated Parmesan cheese
6 slices cooked, crumbled bacon
1 cup chopped cooked or turkey
Preparation
In large skillet, heat olive oil. Add garlic and green onions, stir-fry for one minute. Stir in tomatoes, basil, salt and pepper; cook 2 minutes, stirring frequently.
Prepare pasta according to package directions; drain. Toss tomato mixture with hot pasta and add meats. Sprinkle with Parmesan cheese and serve immediately.

- Great suggestions. I wish we had left over turkey. I wish we had any turkey. The first year we were here in NZ we ordered a turkey to make a traditional Thanksgiving meal. It cost $85 and there were no leftovers (8 people ate dinner).
