Leftovers

I have to admit and some of you might know it already from my other sites, I love food and I also like to cook. But like probably a lot of you as well, it happens from time to time, that I am preparing too much and there is a lot of food left.

With this lens I am going to pick regulary new dishes and share some of my ideas about what to do with leftovers.

Chili Con Carne 

Prepared to much Chili con Carne? Don't worry what to do with the leftovers. Actually you can do more than just warm it up the next day.

Spaetzle Chili Con Carne 

When Mexico meets Germany

SpaetzlePrepare the Spaetzle according instructions given on the package. Mix with the same amount of leftover Chili con Carne and put into an ovenproof dish. Top it with 100 grams of grated gouda cheese and put the dish into a preheated oven at 200 degrees Celsius for 10 minutes.

Talking About Spaetzle 

Spaetzle are traditional german egg noodles, most popular in the southern parts of Germany like Bavaria and Schwabia. Although it is possible to buy them ready made, they are very easy to prepare and much more delicious homemade.

Ingredients
400g flour
4 eggs
100 ml water
salt

Preparation
Mix all ingredients in a bowl and beat the dough until it blisters. Let it stay for 10 minutes to rest. Press portions of the dough with a Spaetzle Maker into boiling salt water. Let it boil for a short while and take if off with a skimmer and splat cool it with cold water.

For preparing the Spaetzle Chili con Carne you can use them this way. To serve them as a side dish, toss it for some seconds into a pan with hot butter and season it with salt, pepper and some nutmeg powder.

Spaetzle Maker 

The following items are ideal for preparing Spaetzle. Although the stainless steel Spaetzle Makers work fine and let you prepare the Spaetzle without a hazzle, I still prefer to cut them from a wooden board like the Gnocchi Board.

Goulash 

The first pick is about goulash. I am sure you know what goulash is and you like it. As well I am sure almost everyone knows the Hungarian Goulash recipe by Jaguar Julie. Did you try this recipe? If you didn't, I would like you to. It is amazing!

Goulash Rolls 

Goulash rolls are not just using leftovers, they are a delicacy themself

Although it is almost not possible to have some goulash left over, it might happen a few times. Here is an idea for when it happens:

Puff Pastry Snacks with Mince FillingIngredients
150 g of goulash meat
150 g yellow pepper
2 spring onions
4 tbsps goulash sauce
3 tbsps tomatoe ketchup
2 tbsps chopped parsley
3 sheets of puff pastry
1 egg yolk
150 g sour cream
5 tbsps milk
salt, pepper

Preparation
  1. Cut the goulash pieces in thin slices, clean the yellow pepper and cut it in small cubes. Clean the spring onions and slice the white and light green part in thin slices.
  2. Put the goulash sauce together with ketchup into a bowl and mix it. Season it with salt and pepper. Mix it with the meat, yellow pepper, half of the sliced spring onions and the chopped parsley.
  3. Roll the sheets of puff pastry and cut them into halfs. Put the prepared filling onto the pastry, leaving an edge of about 1.5 cm.
  4. Whisk the egg wolk with 1 tbsp of water and coat the edges of the pastry and fold them in. Put the rolls onto a with baking paper covered baking tray and coat them with the rest of the egg yolk.
  5. Put the goulsh rolls for about 10 to 12 minutes into the oven, preheated to 220 degrees Celsius.
  6. Whisk the milk with the sour cream and season with salt and pepper. Fold in the rest of the spring onions and serve it together with the goulash rolls.

I used to freeze all leftovers and a couple times a month we would pull them out and have a buffet type supper. Living with my mom has changed that, she doesn't even like me to cook ahead.
