Lemon Cake Recipe - My Mom's Favourite

Moist, scrummy and easy !
This Lemon Cake Recipe was given to me by a very special friend of mine. I was around at her house on day and was given a piece of this cake with a cup of coffee - it was scrummy. So good, that I asked for a second piece and of course the recipe. I now make it all the time. I make 2 cakes at a time and freeze one. It freezes really well too. As we speak I have 2 in the freezer which are waiting for my Dad to sample when he visits from the UK in a couple of weeks. Mom loved it when she visited, but she has not got around to making it from the recipe I gave her yet - she prefers the eating bit. Don't we all ?

The Ingredients
250g Unsalted Butter (at room temperature)
250g Sugar
5 Eggs
2 Lemons - both the zest and juice
250g Plain Flour
2 teaspoons Baking Powder
Pinch Salt
For the Finishing Touches
1 Lemon
Icing Sugar
Method...
1) Pre-heat oven to 170C
2) Get the juice and zest from your 2 Lemons
3) Mix the sugar and butter until fluffy
4) Add eggs, lemon juice and zest and mix well
5) Add flour, baking powder ad pinch salt
6) Bake in the oven for 55-60 minutes
