Maybe it's because I am an autodidact, largely self-taught cook, or maybe it's just because I have a genetic urge to tweak things a little, or a lot. Whatever the reason, I can't leave a recipe alone. Even the first time. Inevitably my thought pattern goes from "that sounds good" to "but what if..."
I hope to encourage that perversity in you, too.
Maybe there is a recipe out there that should NEVER be done any other way. If so, they are few. Don't let someone's printed word or memorized process terrorize you into conformity. We would never have the delicious diversity of culinary offerings today if people did not apply their creativity to what was available, what was in season in the fields and garden, what the hunters brought home or the fishermen caught today.
About me? I am not a professional chef, but I did buy a toque for the mug shot I did for The Bachelor Cooks, my little foray into self-syndicating a humorous food column. I flatter myself to characterize it as a single Dave Barry writing about how to woo women with food. (BTW, it works!) A few of those columns that have aged better than others may get some air time here.
I'm also the feature writer for French Cuisine on Suite101.com. You can find my several blue-cheese related articles published there immodestly promoted from these pages.
I am not a bachelor anymore (and strive daily to stay that way). I do have a day-job (show me a writer who doesn't and please introduce me to her/him) that is mostly writing or giving grief to people promoting pet projects. I live in Portland, Oregon, but aspire to retire to a little French or Italian or Spanish town with narrow windy streets, reasonable cost of living and an inspiring farmer's market. Know any? We need to talk.
