How to Make Vegetarian Lentil Stew

I love vegetarian lentil stew. It's comfort food to me. It's so hearty, warming and nutritious! I cook it quite often for those reasons!

The recipe that I use is one that I got from a friend several years ago and I've modified it significantly to suit my own tastes. I want to share it with you here.

Just follow the steps I outline for you. Learn from the extra tips and videos I've included. Have fun with the debate that you'll find later in the page. And, most of all, enjoy your lentil stew! It's great on a cold day, a day when you feel like you need some comforting, or just any time you want some!

The Ingredients

2 cups red lentils, washed
4 cups vegetable stock plus 2 cups water
1 onion, diced
1 leek, sliced
2 cloves garlic, crushed (or prepared)
2 strips kombu, if desired
4 celery stalks, diced
4 carrots, diced
6 mushrooms, sliced
2 zucchini, sliced
2 yellow zucchini or squash, sliced
1 daikon radish or mild turnip, diced
1 green, yellow or orange pepper, diced
1 can diced or stewed tomatoes
1 tsp ground cumin
1 tsp turmeric
salt
pepper

How to Make Lentil Stew: Step 1

Start Cooking Your Lentils


Dice the onions and place them in a dutch oven or stock pot. Slice the leeks and add them to the pot. Add the garlic. Measure the lentils and place them in a hand-held, mesh strainer. Check through the lentils and remove any damaged or discolored ones as well as any other debris. Rinse the lentils under running water until the water runs clear. Add lentils to the pot. Add veggie stock and water. Add a couple of strips of kombu, if desired. Bring to a boil, reduce heat and simmer for approximately 15 minutes, or until lentils are softened.

Note: If you choose to use green lentils, the cooking time will increase. Also, they retain their shape and stay firmer. Red lentils cook more quickly and result in a thicker, mushier texture.

Prepare Your Veggies


While the lentils are cooking, prepare your veggies. Wash them well, peel the ones that need to be peeled and chop off the ends and unwanted parts. I like to use a garbage bowl for the peelings and ends of things like carrots and zucchini. This makes clean-up a lot quicker and easier! Cut up the veggies and place them in a bowl for easy addition to the lentils.

I'm a vegetarian and I'm moving in the direction of vegan. I think that vegetarian options are healthy choices for anyone to include in their diet.

Vegetables should be banned. Give me MEAT. MEAT, I say!

 

How to Make Lentil Stew: Step 3

Let it Cook!


When the lentils are soft, add the veggies, except for the canned tomatoes. Cook for approximately 10 minutes. Add the canned tomatoes and spices, except the salt. Cook for another 5-7 minutes.

Mmmm. It's Time to Eat!


Add the salt (and do a taste test). It's fun to pour the stew into a soup tureen and serve it in French onion soup bowls. I find that these kinds of bowls really add to the heartiness and comforting feeling of the stew. Enjoy!

Note: Serving lentil stew (or other pulses) with a grain (like brown rice, barley or wheat) gives you a complete protein.
