However, good, nutritious food containing the expected vitamins and minerals is often difficult or impossible to obtain in our modern society. While fresh fruits and vegetables are a valuable source of vitamins, minerals, fiber and phytonutrients, and studies have proven that many health benefits accompany this diet, few people eat enough of them.
The United States Department of Agriculture advocates 5-13 servings daily of fresh fruits and vegetables. Eating two fresh peaches in 1951 would have supplied today's RDA of vitamin A for a woman that now would require 53 peaches, according to a 2002 CTV news item. By the time it reaches the table what nutritional value it once had is mostly depleted.
