I Love Lemons!

Lemon bars, lemonade, lemon cake, lemon curd, lemon meringue pie. Lemons, yummm! Most of us immediately think of lemon flavored foods and of course lemonade when we hear the word "lemon". But did you know there are uses for lemons outside the kitchen? Read on for new uses, new recipes, and fun information about all things lemon!

What Wikipedia says about Lemons...

The lemon is the common name for Citrus limon. The reproductive tissue surrounds the seed of the angiosperm lemon tree. The lemon is used for both culinary and nonculinary purposes throughout the world. The fruit is used primarily for its juice, though the pulp and rind (zest) are also used, primarily in cooking and baking. Lemon juice is about 5% (approximately 0.3 mole per liter) citric acid, which gives lemons a tart taste, and a pH of 2 to 3. This makes lemon juice an inexpensive, readily available acid for use in educational science experiments. Because of the tart flavor, many lemon-flavored drinks and candies are available on the market, including lemonade.

Lemon Pharmacy

There are a variety of ways that lemons and their juice can be used around the house. Check out these personal care uses:

*Lemon juice applied to the hair can supposedly naturally lighten the hair.

*Apply lemon juice to facial blemishes for an acne treatment.

*Lemon is used in some facial masks for refreshing the skin.

*Raw lemon can be used as a short term deodorant.

*Mixed with honey, lemon juice can be used as a cough suppressant

*Lemon juice with it's high acid level can be used as a disinfectant.

Lemon Recipes

LEMON CURD

3/4 c. lemon juice
1 tbsp. grated lemon peel
1/4 c. butter, cut into pieces
1 1/4 c. sugar
4 eggs, lightly beaten

In a double boiler over simmering water, combine lemon juice and peel, butter and sugar, stirring until butter has melted. Add beaten eggs to lemon mixture, stirring constantly with a wooden spoon. Continue to stir over medium to low heat until mixture is quite thick, it should coat the back of the spoon. (Be careful not to over cook or it will separate.) Remove from heat.

Cool, then cover with plastic wrap and refrigerate. Keeps up to 3 weeks in the refrigerator.

Makes about 3 cups.
