Delicious Mushroom Bacon Omelet

Ingredients
- 2 Medium Eggs
- 1 oz Velveeta Cheese (About 1 Slice) (Shredded Optional)
- 1 Strip Bacon cut into Pieces
- 1 Portabella Mushroom cut into pieces
- 2 Tablespoons Milk
- (Optional) 1/3 Cup Diced Onions (Additional Calories Negligible)
- (Optional) 1/3 Cup Green Bell Pepper (Additional Calories Negligible)
Instructions
Heat Skillet over Medium Heat. In a bowl, mix the eggs and the milk. Once the skillet is hot enough, spray with non-stick spray (preferred) or light butter (BE CAREFUL WITH THE BUTTER; Even one tablespoon adds 100 calories to the dish!). Add the eggs, being sure to wait until it coats evenly over the pan. Add the mushrooms, bacon, shredded cheese, onions and green bell pepper. Once egg is firm, place on a plate carefully and fold like a taco.
Serve with a slice of whole wheat toast (Additional 100 Calories), or Dressing-less Salad (Additional 20 Calories).
Tangy Citrus Cucumber Omelet

- 2 Medium Eggs
- 1/2 Cup Strips of Mango
- 1/2 Cup Slices of Cucumber
- (Optional) Lettuce (Additional Calories Negligible)
- (Optional) 1 Tbsp. Thousand Island Dressing (Additional 60 Calories)
Instructions
Heat Skillet over Medium Heat. Scrambled the eggs. Once the skillet is heated, add scrambled eggs and cook until eggs are firm. Set aside on a plate, but make sure you keep the shape round. DO NOT FOLD.
In a separate bowl, mix together the slices of cucumber, the strips of mango, and strips of lettuce. If you'd like, add 1 Tbsp. Thousand Island Dressing for flavor. Serve on top of the cooked egg.

Remember: You'll probably screw up making an Omelet the first time! So don't worry if the meal doesn't end up looking like you hoped. It all ends in the same place anyway, right?
HEALTHY TIP - Try Egg Whites!
If you feel that the egg portions are too small, but don't want to eat anymore calories, then why not try Egg Whites? Compared to the calories in a regular large egg (about 70 Calories), egg whites are only 17 calories per serving. Eat four egg whites and it'll be like eating a regular egg - only with more sustenance!

- 1 Medium Egg
- 1 pinch cinnamon
- 2 Tsp. Powdered White Sugar

- (Optional) Fruits for Garnishing (Calories vary)
- (Optional) 1 Tbsp. Honey (Additional 60 Calories)
Instructions
Heat Skillet over Medium Heat. In a shallow bowl (or plate if preferred), scrambled together the eggs and cinnamon. Once eggs are completely scrambled, soak the bread in the mixture for two minutes on both sides. On the Skillet, melt the butter and cook the French Toast. Make sure both sides of the bread are golden before removing. Top finished product with the white sugar and/or honey. Garnish with Fruits (Strawberries, Bananas, and Cantaloupes are best).

I normally don't play favorites, but this recipe is SO GOOD. I made this in High School once during Cooking Class, and since then I've been making Breakfast Burritos. It's great for those that are on the go; just make the burrito the night before, and in the morning grab it and you're off!
This isn't the original High School recipe, of course. I had to substitute a few things to lower the monstrous calorie amount. Now I'm using this recipe to eat one of my favorite breakfast dishes - and I don't have to feel guilty about it!
Ingredients
- 1 Strip of Bacon
- 4 Medium Egg Whites
- 1 Slice Velveeta Cheese (Shredded)
- 1 Tbsp. Salsa
- 1 Tbsp. Can Refried Beans
- 1/2 Cup Shredded Lettuce
- 1 8-inch Flour Tortilla
Instructions
Cook the Bacon in one pan, and the egg whites in another (DO NOT mix them together!). In a pan, heat the Flour Tortilla for a few seconds - enough to make it warm and easy to fold. (DO NOT MAKE IT CRISPY). Lay the Flour Tortilla on a plate and top it in this order: Refried Beans, Bacon Strip, Egg Whites, and Shredded Cheese. Roll into the shape of a Burrito. Top your delicious creation with any extra Shredded cheese and Salsa.
