Low Cholesterol Lemon Pie

A low cholesterol - no egg - homemade lemon pie that tastes great? You bet and it is easier to make than you might think it would be.

I wanted to make a homemade lemon pie, I mean a real lemon pie made from scratch, rather than one from a box mix. So I started sifting through my recipes, but I was shocked by the amount of eggs required in a single lemon pie, wow! One large egg contains about 214 mg of cholesterol while the total daily recommended consumption for cholesterol for a person is around 300 mg per day.

That means that one slice of lemon pie could contain an entire days cholesterol within it. Not a very healthy piece of pie at all. I wanted a healthy dessert recipe. I did not like that idea very much so I invented my own low cholesterol lemon pie recipe.

My eggless lemon pie recipe made from scratch...

I decided to search online for an eggless lemon pie recipe. I was pretty disappointed with my results. So being the stubborn person that I am, I decided to create my own homemade lemon pie, and one that would not require eggs.

I started with four recipes and then took a little information from each of these. I then tried substituting a couple of different ingredients, and also the amounts that I put in of them, and after three attempts I came out with what I figured was a pretty good eggless lemon pie.

I tried it, my guy tried it, and my daughter tried it. We all agreed that it came out pretty darn tasty. It had zip and it had zing. The only thing that it did not have was a lot of color? I have heard a lot of nasty information concerning food colorings, so I decided that I wasn't really too worried about a misty looking lemon pie if it tasted good, and was healthy for us.

So this is officially my low cholesterol eggless homemade lemon pie with oatmeal crust recipe. I hope you enjoy it as much as we do.

So pull out the lemon and let's make a pie...

These are the ingredients that you will need for my eggless homemade lemon pie recipe...

Lemon Filling:

5 and 1/2 tablespoons corn starch
1/2 cup sugar
1/8 teaspoon salt
1/2 cup lemon juice
2 and 1/4 cups boiling water
1/2 cup one percent milk
1 teaspoon non-hydrogenated, zero trans fat, margarine

This is enough filling for 1 large pie, and just in case you were wondering how much cholesterol there is in corn starch, well it is nice to know that corn starch contains zero cholesterol.

Crust:

1 1/4 cups of non-hydrogenated, zero trans fat, soft margarine
1/2 cup of lightly packed brown sugar
2 1/2 cups of your choice of brown or white flour
3 cups of quick oats
1 cup of old fashioned oats

This crust recipe will make 3 large crusts, so you will have two spare for either other pie fillings, or to pop into the freezer for a later date.

Note: Stay away from the hard margarines. They may be easier to measure out, but they are also loaded with trans fats, and they are those nasty fats that clog up your arteries. Check the nutritional list on the soft margarine that you purchase, and be sure that it is non-hydrogenated, and contains zero transfats.

When making your crust don't worry if you don't quite get your measurements exact. If your dough is a little too sticky then add extra quick oats. If it is a little too dry then add a little more margarine. It will still come out nice and toasty tasty.

Crust first: In large bowl mix together brown sugar, margarine, oats and flour.

Mixture should be slightly moist and crumbly. Divide it between the 3 pans and lightly press it into a crust in each.

Bake at 350 degrees for about 15 minutes.

While the shells cool it is time to make the lemon pie filling...

These are the ingredients....

5 and 1/2 tablespoons corn starch
1/2 cup sugar
1/8 teaspoon salt
1/2 cup lemon juice
2 and 1/4 cups boiling water
1/2 cup one percent milk
1 teaspoon non-hydrogenated, zero trans fat, margarine

Directions:

1. Stir together corn starch, sugar, and salt in a medium sized pot. Add in the lemon juice and stir this mixture till it is creamy smooth.

2. Stirring constantly add in the boiling water. Continuing to stir, cook the mixture over medium heat till mixture thickens, this takes about five minutes. Add milk and continue to cook for one or two more minutes.

3. Remove pot from heat and stir in the margarine.

    This oatmeal pie crust I created especially for my husband. He loves his treats but is prone to high cholesterol and I want to keep him beside me for as long as I am able to. Which means I am constantly looking for ways to improve our food to make it a little healthier.

    This looks really great. Lemon Meringue Pie is popular in the UK, but I am not a big fan of the meringue topping, just give me the pastry and filling, and none of that bright yellow coloring either, so guess what?     Oatmeal is soluble fiber which absorbs cholesterol and flushes it from the body. So using an oatmeal crust rather than a fat laden flour one really makes this lemon pie a much healthier recipe.

    Especially pumpkin pie - I love the smell of pumpkin pie. Smelling pumpkin pie brings back memories of happy holiday celebrations, and makes me feel all warm and fuzzy. Isn't it funny how smells can evoke memories with such intensity? Sometimes just thinking about an aroma is enough to give me what I call an olefactory hallucination, because I can imagine inhaling the fragrance and I'll get almost the same intensity of memory as if I'd actually sniffed the real thing. Powerful thing, our sense of smell. Amazing.
