Heart Healthy Recipe for Lemony Squares

Here's a heart healthy twist to the all-time favorite classic! Who says you have to give up good flavor for unwanted calories? You can have your lemon square and eat it too! This recipe is simple and easy to prepare, and most of all, it is yummy and good for you too!

Luscious Low-fat Lemony Squares

What you will need

For the crust:
1 cup white whole wheat unbleached flour (you can use regular flour if you wish, but this kind is healthier)
1/4 cup sugar
1/4 cup chopped walnuts or pecans
1/2 cup light stick margarine, sliced in to 4 pieces

For the filling:
2/3 cup sugar
whites of 2 eggs
1 large egg or egg substitute equivalent to 1 egg
2 tablespoons white whole wheat unbleached flour
1 teaspoon grated lemon zest
6 tablespoons lemon juice (fresh squeezed or ReaLemon)
1/2 teaspoon baking powder

2 tablespoons confectioners' sugar (for topping)

8 inch square baking dish

What to do next

1. Preheat oven to 350 degrees.
2. Spray 8 inch square baking pan (or Pyrex dish) with cooking spray.
3. In medium mixing bowl, combine flour, nuts, sugar and margarine. Beat with electric mixer on medium speed until mixture is crumbly.
4. Press evenly on bottom of baking pan.
5. Bake for 15 minutes.
6. In the same bowl, beat the remaining ingredients on medium speed for about 2 minutes. The mixture will be thin, so don't panic!
7. Pour over hot crust.
8. Bake for about 20-25 minutes or until topping doesn't jiggle when you shake the pan. Let cool for about 30 minutes.
9. Dust with confectioners' sugar before serving.
10. Cut into squares and enjoy!

Refrigerate leftovers (if there are any!)

Serves 16 - 1 square per serving

Protein - 2g
Carbs - 20g
Total fat - 3 g
Cholesterol - 0 g (if you use the egg substitute)

Remember - this is still healthier than the store bought variety!
