Tasty Shepherd's Pie Recipe

- Serves: (serves 4)
Ingredients
- 1lb lean minced lamb (or lean minced beef if you prefer)
- 2lb potatoes
- 1 tbsp vegetable oil
- 1 chopped onion
- 1 crushed clove garlic
- 1 red pepper diced
- 1 tbsp plain flour
- 8 fl oz beef stock
- 4 tbsp milk
- knob of butter
- 3oz grated Cheddar cheese
Instructions
1. Preheat the oven to 400F
2. Cut the potatoes into even-sized pieces then place them into a pan of boiling water and cook for around 15-20 minutes or until tender. Drain.
3. Meanwhile heat the vegetable oil in a large frying pan and fry the onions for around 4 minutes. Add the garlic, minced lamb (or beef) and red pepper, cook for 5 minutes. Stir in the flour then add the stock and bring to the boil, stirring continuously. Season with a little salt and pepper.
4. Mash the potatoes and mix with the milk and butter. Season well.
5. You can either spoon all of the mince into a large ovenproof dish or spoon into individual small dishes, top with the potato and sprinkle with Cheddar cheese. Bake in the oven for 25-30 minutes on the middle shelf until the cheese is nice and golden.

Everything in this salad is GREEN
Ingredients
- Lettuce
- Cucumbers
- Peppers
- Snow Peas
- Avocados
- Sprouts
Instructions
The fun of making this salad begins at the grocery store selecting the fixings. Anything green, such as lettuce, cucumbers, peppers, snow peas, avocados and sprouts, is fit for the mix. Serve with your favorite salad dressing.
Irish Soda Bread

Serve it warm or toasted with tea.

Ingredients
- 2 cups white flour
- 2 cups whole wheat flour
- 1/2 cup sugar
- 2 tsp baking soda
- 1 tsp salt
- 4 tbsp butter
- chilled
- 1 cup raisins
- 1 1/2 cups buttermilk or plain yogurt
Instructions
1. Heat the oven to 350 degrees. In a bowl, combine the dry ingredients.
2. Cut in the butter until it is pea-sized. Stir in the raisins and buttermilk or yogurt. Turn the dough onto a floured surface, knead 1 minute, and shape into a disk.
3. Cut an "X" in the top and bake on a greased baking sheet for 45 to 50 minutes. Makes one 8-inch-wide loaf.
Kiwi Lime Pie

- Serves: 8
Pop some crackers into a zip-top bag and crush them with a rolling pin.
Ingredients
- 1 cup graham cracker crumbs
- 3 tbsp butter
- melted
- 1 14-oz can sweetned condensed milk
- 4 egg yolks
- 1/3 cup lime juice
- thin chocolate cookie wafers
- 1 kiwi
- peeled and sliced
Instructions
1. Heat the oven to 350 degrees. Mix the graham cracker crumbs and butter in a bowl. Firmly press the crumbs against the bottom and sides of a 9-inch pie pan. Bake for 5 minutes.
2. In another bowl, stir the sweetened condensed milk, egg yolks and lime juice until well mixed. Pour the mixture into the crust and bake for 15 minutes or until an inserted knife comes out clean.
3. Once the pie cools, push cookie wafers into the filling along the edge. Top with kiwi slices arranged to resemble a shamrock. Serves 8.
St Patrick's Day Martini
Ingredients
- 2 jiggers of gin
- 2 jiggers of crème de menthe
- 2 splashes of mint bitters
Instructions
Add gin, creme de menthe, and bitters into a martini shaker. Shake well. Strain into a chilled martini glass.
