When you order a product with a minimum of 15 pieces, you can choose between a default assortment of chocolates (traditional combination of dark and milk) or opt instead for a more exotic combination assortment, 15 dark or milk chocolates, 15 pralines, 15 Z chocolates, a colorful mix of 12 hearts, 15 truffles, 40 chocamandines or 20 orangettes. If the product you select contains several layers, you can change the assortment of each layer separately. Assortments of 4 and 9 chocolates contain a pleasing balance of a white Z chocolate and dark and milk chocolates with a variety of fillings but are not customizable unless you choose a personalized assortment, which allows you to handpick each chocolate individually. This option is available for all of our assortments.

This selection includes 4 chocolates from number 0 to number 2 plus the Z chocolate: a combination of a crunchy praliné with a sweet and salty caramel, followed by a slow-roasted hazelnut-almond praliné, a vanilla ganache infused with lavender and an unforgettable Italian gianduja praliné. This assortment contains 2 dark chocolates, one milk and one white chocolate.

This selection includes 9 of our most popular zChocolates from number 0 to number 7 plus the Z chocolate: a sweet & salty caramel with a crunchy hazelnut praliné, a slow-roasted hazelnut-almond praliné, a vanilla ganache infused with lavender, an unforgettable Italian gianduja praliné, a passion fruit-mango caramel, an almond-peanut praliné, a Venezuelan dark chocolate ganache, a slow-roasted minced almond praliné and a sweet & salty pistachio-almond marzipan. This alternative selection includes a combination of traditional tastes with more exotic ones. The more familiar flavor combinations are a milk chocolate orange, a milk chocolate ganache, and a coffee ganache, while the more daring are a very nutty coconut, a violet ganache, sesame & coriander pralines and an exotic fruity Sichuan pepper. This assortment holds 7 dark, 6 milk, and 2 white Z chocolates.

Elegant and romantic, this assortment of 12 heart-shaped chocolates includes 4 different recipes with different covers. Born of the talented mind of a 17th century French chef at the Chateau de Vaux-le Vicomte, pralinés, which are whole nuts covered in caramelized sugar, have become a sought-after confection the world over. We have mastered the art of creating these confections and then grinding them into a very fine powder to be mixed with premium cocoa. The resulting grainy texture and nutty flavor infused with a strong chocolate aroma is quite simply heavenly. Discover hazelnut, sesame seed, almond, pistachio, coriander and walnut pralinés drenched in dark or milk chocolate. This assortment holds 5 dark, 9 milk, and 1 white Z chocolate.

At the early age of four, Pascal Caffet assisted his father Bernard, a pastry chef, in his shop in Troyes, France. In 1979, Bernard Caffet opened a chocolaterie, and his devotion and zeal were infectious; Pascal was hooked. Instilled in the young Caffet was the importance of using traditional methods while exploring exotic new recipes.
For Pascal, chocolate is not merely a treat, but an experience. While some artists use paint or clay, Pascal has found nature's ingredients to be his finest medium.
Pascal takes pride in handpicking his raw materials and believes that premium ingredients are the key to creating the finest chocolates. He uses absolutely no preservatives and no fat other than pure cocoa butter. It is no wonder that by the time Pascal turned 27, he had become the youngest Meilleur Ouvrier de France in his profession. Shortly thereafter, he won the Gold Medal at the Chocolate World Championship in Milano, Italy.
After Pascal inherited his father's business, he and his wife Florence turned it into the gastronomic sensation of Troyes. Three new boutiques opened in his hometown, followed by a shop in Paris and four Pascal Caffet chocolateries in Japan.
When he is not dreaming up new recipes to elate our palates, he is teaching his apprentices the art of seducing the most scrupulous chocoholics. It takes precision, enormous patience, and inspiration. In 1997 he established the Trophée Pascal Caffet with the goal of encouraging emerging young chocolatiers worldwide to demonstrate their talent and make names for themselves.
In 2000, Jean Philippe Khodara, co-founder of zChocolat.com, approached Pascal Caffet with the opportunity to make his award-winning chocolates available worldwide through the Internet. This would be the first time that anyone, anywhere could order some of Pascal Caffet's creations to be delivered straight to their door.
