Here's a recipe for an inexpensive and tasty mac & cheese dinner

Home cooking doesn't need to cost a lot to taste great. And it doesn't even need to be hard, either. This is one of my favorite macaroni & cheese recipes, which includes beef. Your whole family will enjoy this one

Ingredients 

1 lb. lean ground beef
1/2 Cup chopped onion
2-1/2 Cups uncooked elbow macaroni
6 Tbs butter
1/4 Cup all-purpose flour
3 Cups milk
4 Cups shredded "Mexican" blend cheese (Or traditional cheddar if you prefer)
pepper to taste

Directions 

1. Preheat oven to 375 degrees.

2. Brown beef and onion in a frying pan. Drain and set aside.

3. Cook elbow macaroni according to package directions. Drain. Place in large casserole dish, along with ground beef and onion; mix.

4. In a saucepan, melt butter over medium heat. Stir in flour until smooth. Gradually add milk; bring to a boil. Cook and stir for 2 minutes; reduce heat. Stir in cheese and pepper until cheese is melted. If desired, some cheese can be reserved to sprinkle on top before baking.

5. Pour cheese over macaroni and mix well.

6. Bake uncovered for 30 minutes. Serves 6-8. Yum!
