Salsa

 

The Mexican word for "sauce," salsa may be made with a variety of ingredients and may be fresh or cooked. chunky to smooth, green to red, hot to mild. Salsa has come to mean a cold, uncooked sauce made from tomatoes, onions, chiles and cilantro. But it can be made from a combination of any fresh herbs, spices, fruits and/or vegetables.

Basically it breaks down like this: you can take any combination of fruits and or vegetable (ANY COMBINATION). Throw in some fresh or dry herbs...but fresh would be best. mix it up REAL good and BLAMO....you have salsa. A virtually no calrie no fat no preservative yummy sauce that you can add to almost any food to enhance the flavour.

the mighty salsa

smokey habanero

5 whole habaneros, seeded
10 whole tomatillos, husked and rinsed
2 whole Vidalia onions, skinned
6 whole sweet red peppers, seeded
2 whole smoked habaneros
3 whole chipotle peppers
1 Tablespoon cumin
2 ounces balsamic vinegar

Apple Pear Salsa

2 tablespoon Fresh lime juice
¼ cup Pineapple juice
3 Anjou pears, unpeeled, diced
3 Red Delicious apples, unpeeled and diced
2 tablespoon Fresh mint, diced
3 serrano chilies, seeded, minced

Avacodo and Kiwi

1 ½ cup finely diced kiwi
1/3 cup chopped fresh cilantro
2 scallions or green onions; green part included, thinly sliced
1 or more chopped fresh serrano chiles, according to taste
1 tablespoon lime juice
2 medium-sized firm-ripe (not soft) avocados, diced
salt to taste
