The dishes and utensils used in preparation can be cleaned and put away long before the meal is to be served. Not only will the kitchen be neater, but there will be more space for any last minute preparations that are necessary for the other courses. When the supply of kitchen utensils is limited, pre-preparation of the appetizers will leave many utensils available for the last-minute meal preparations.

When serving made-ahead appetizers, the hostess is confident that the food is delicious, attractive, and most importantly, ready. This allows her a few minutes for final touches or relaxing before greeting her guests, assured that the first course will be a success.

Good warm or cold. An appetizer that you handle like refrigerator cookie dough and like its sweet cousin, just slice and bake as needed.

Ingredients:

1 jar pasteurized process sharp American cheese spread
1/4 cup shortening
2/3 cup all purpose flour

In small mixer bowl, mix all ingredients on medium speed 20 to 30 seconds. On lightly floured surface, mold dough into 2 rolls, 1 inch in diameter and about 8 inches long. Wrap and chill at least 2 hours.

Heat oven to 375 degrees. Cut rolls into 1/4 inch slices. Place on ungreased baking sheet. Bake 10 to 12 minutes or until golden brown.

Preheat oven to 400°.

In a small bowl, combine1/3 cup chopped mixed fresh herbs, such as parsley, chives, and mint, 2 garlic cloves, minced, and 2 table­spoons extra-virgin olive oil. Season with coarse salt and ground pepper.

On a lightly floured work surface, unfold 1 sheet frozen puff pastry, thawed. Spread pastry with herb mixture and roll up. With a sharp knife, cut into ¼ inch-thick rounds. Arrange rounds on a parchment-lined baking sheet and bake until puffed and golden on edges,15 minutes. Let cool on sheet on a wire rack, 10 minutes. (Store in an airtight container, up to 3 days.)
