Lovely Homemade Lemonade

Lemonade is the name I give to all non-alcoholic lemon drinks whether they are still or fizzy. They are so very easy to make, it's hardly worth the effort of buying lemonade in the stores. It certainly isn't worth buying lemonade powder or crystals when you could just as easily buy real lemons with all their natural goodness.

Basic Still Lemonade

A Very Quick and Easy Recipe

Ingredients
3 lemons
1-3/4 cups (6oz) sugar (or enough to suit your taste)
3 cups (1.5pints) boiling water

Method
1. Thinly slice rind off the lemons, avoiding the white pith and squeeze juice from them, removing pips.
2. Put the rind and sugar in a heatproof bowl or jug and pour over boiling water.
3. Stir and then leave to stand, although you can stir it occasionally.
4. When it is completely cold, add the lemon juice and stir.
5. To serve: Strain the lemonade to remove rind and any pip that sneaked in. Pour into a nice jug with plenty of ice and slices of lemon.

My Favourite Peeler

It Peels Thinly and Efficiently

Before I had this vegetable and fruit peeler, I always used a knife for the job. I never could get on with the traditional ones where the blade is sideways to the handle. I find this kind of peeler so much easier to use that I now use it exclusively for peeling.

It is particularly good for peeling the rind off citrus fruit like lemons. Because the blade is sharp and the shape makes the peeler easy to control, slicing off the rind only and leaving the pith behind is easy. Personally, I couldn't do such a good job with a knife or traditional sideways on peeler.

Citron Presse

Lovely French Lemonade

Citron pressé is my absolute favourite lemon drink. I first tasted it in the French town of Bayeux. It was a desperately hot day and we needed a cold drink so we sat at the outside tables of a café and the waiter suggested citron pressé. It was delicious and so cooling. It's worth going to France just to drink it.

Ingredients
1 lemon per person
Ice
Sugar
Water (sparkling or still)

Method
Remove pips from juice and pour the equivalent of the juice of one lemon into a drinking glass. Add 2 teaspoons of sugar and some ice. Put the water into a jug and sugar into a bowl.

Serve the glasses of barely sweetened lemon juice with the jug of water and bowl of sugar. You should also serve it with long spoons. Each person then helps themself to sugar and water to sweeten and dilute the juice to suit their taste.

It really is that simple but it is so delicious that I urge you to try it.

Lemon Barley Water

You Don't Have to Be Ill to Drink It

Here in the UK, Lemon Barley Water is usually given to sick people. When visiting a hospital patient, a bottle of lemon barley water on the bedside cabinet is quite a normal thing to see. It used to be traditional to see it available to tennis players during the Wimbledon Championships but now, of course, most players take their own drinks. It's as easy to make as other lemon drinks even though it does take longer. Homemade lemon barley water is a real treat and worth spending a little extra time to do.

Ingredients
2oz (50g) pearl barley
Juice of 2 lemons
2oz (50g) sugar
Water

Method
1. Put the pearl barley in a pan and just cover it with cold water. Bring to the boil, strain the barley then rinse in cold running water.

2. Put the pearl barley back in the pan and add 2 cups (one pint) of water. Boil again and then reduce heat so the water simmers. Cook for one hour.

3. Strain the liquid (barley water) into a jug or bowl, add the sugar and then leave it to cool.

4. When it's perfectly cold, stir in the lemon juice and your lemon barley water is ready.
