Royal Icing is perfect for decorating a Christmas cake, a special party cake (like these for a Twilight Birthday Party) or decorating a beautiful gingerbread house. Royal icing is the thick, solid icing that is often seen on wedding cakes and Christmas cakes.  Made of egg whites and sugar royal icing is white but different colors can be made by using specliast food colorings.  Read on to find out more.

How to Make Royal Icing

Part I - Mixing Royal Frosting

In this part you will learn how to make your royal icing. You will need:

1) Three egg whites

2) 5 cups of powdered confectionery sugar (sometimes known as icing sugar)

3) Water as needed to get the thickness you want

Charlene Dy has an alternative royal icing recipe on her website if you prefer a recipe using meringue powder instead of egg whites. There are salmonella risks from raw egg - definitely not recommended for pregnant women or young children.

Tip

Remember to store your royal icing in a metal or glass container. It may separate in a plastic container.

Royal Icing Recipe

Here's another ..

1 pound (3-3/4 cups) powdered sugar, sifted if lumpy
1 to 2 large egg whites, or substitute 4 teaspoons packaged egg whites and 1/4 cup water
1 teaspoon almond extract, vanilla or lemon juice

Mix all of the ingredients together using an electric hand mixer, until the icing is smooth and thin enough to be pressed through a pastry bag with a writing tip. Add more lemon juice, if necessary.

One of the fun things you can decorate with royal icing are houses made out of gingerbread. They look fantastic. If you watched the first of the two Charlene Dy videos, you'll have spotted a beautiful gingerbread house towards the startt of the video. If you would like to make your own gingerbreadhouses, or just see pictures of the marvelous houses other people have decorated (and some are amazing!) then this special lens will show you how.

Simpler, but something children love just as much, is to make gingerbread men cookies and then decorate them.
