Delicious Whole Wheat Waffles from scratch
I love to cook. Now that we have no cable, I have less distractions. Hoping to make a ton of new recipes this year. For bulk cooking, double this recipe and freeze the leftovers for a quick and tasty breakfast. These are also a great way to sneak in some fruit for kiddos (and adults!) who don't get enough fruits and veggies.
3 cups whole wheat flour
4 teaspoons baking powder
1 teaspoon salt
4 tablespoon sugar
2 eggs
2 cups milk
1 cup water
1/3 cup vegetable oil
6 oz unsweetened applesauce
Mix all dry ingredients together in a large bowl. Mix eggs, milk, water, and vegetable oil in separate bowl. Stir dry ingredients to wet ingredients, mixing well. Add applesauce (if too thick, add more applesauce. It should be lumpy, but run easily from a spoon). Cook as instructed for your waffle maker!
You can even make your own applesauce! Just peel, decore, and cube about 6 apples. Place them in a steam cooker for about 40 minutes, or until extra mushy. Place into a bowl and use a hand blender to blend together. Voila! All natural, homemade applesauce!
These were the best waffles I have ever made! They are very light and fluffy and yet filling. You are very welcome to use 3 cups of milk and 2/3 cup oil instead of water and applesauce. I wanted a healthier waffle. You can also throw in some ground up flax seed to get those important omega-3's in. Make sure you ground them up, as the nutrients are inside the seed. Your body can't break down the outer husk to get to the nutrients. Makes 10 waffles.
