    I've made cakes from scratch before. They are quite tasty. Do you know of a substitute for shortening?

    Thanks for adding substitutes for shortening. I've read of substituting applesauce for eggs before. It's interesting that it can be used for shortening as well.

    I love to make cake from scratch, but I like to use butter, so if I were to prepare this Homemade Cake Mix, I'd leave out the shortening and use a cube of butter when I got ready to make the cake. I usually cream the butter and sugar first, but it would be really handy to have all the other dry ingredients ready to go. I really should do this.

    Thanks for this lens. I hate buying prepared mixes of any kind because you never really know what they have put in it. I cannot wait to try the brownie mix from this lens, especially!

    I make my cakes from scratch because I am not a fan of additives or preservative either, but I never thought of making a large batch of the mix and saving them in containers to use later or to send as gifts. That is a great idea.

    Isn't it funny how my grandmother probably would never have thought to buy cake mix in a box, and I have never thought about creating my own mix? Well, I'm going to try it. Homemade mix is probably much more healthy. : )
