Making your own wedding cake is not as hard as it looks, and it's way cheaper than buying it. With wedding budgets getting tighter, and wedding costs on the rise, making your own wedding cake may be your best option.

From baking, to decorating, to the final assembly, I'll walk you through the steps to make a beautiful wedding cake.

I want to show you how easy it is to decorate your own wedding cake. With wedding costs rising, and many weddings on a budget, here is one thing you can save on when planning your wedding.

Several Months Before the Wedding 

To determine the type of cake you'd like to have, visit bridal shows, check websites, or visit a few bakers.

Once you've picked a style for your cake,check out how the cake was decorated. What type of icing, or pre-made decorations were used?

Make notes! Get photos if possible.

You may want to take a cake decorating course, or a course in fondant if your cake decorating experience is limited.

Purchase the tools you'll need to decorate your cake.

Practice. You may not need to make the entire cake, but you can make some smaller cakes and practice any elements in the decoration you may need to work on.

A Month Before The Wedding 

Double check that you have all the tools you need to build and decorate your cake.

Recruit friends to help you, and backup support.

Make any final decisions on how you will make your cake. Will you use a box mix or make it from scratch? Will you add filling between the layers?

Butter Cream Icing Recipe
I got this recipe from my sister, and I've had great luck with it.

Ingredients:
1/2 cup butter (softened but not melted)
1/2 cup shortening
4 cups powdered sugar
1 teaspoon vanilla
pinch of salt
5-6 tablespoons of warm water

Cream the butter and shortening together until smooth, add the vanilla. Dissolve the salt into the warm water completely. Mix the water/salt mixture into the creamed butter and shortening. Put the mixer on low, and add powdered sugar slowly, mixing constantly.

The amount of water can be increased or decreased to achieve the desired consistency, I usually have the best luck with 6 tablespoons.

Add food coloring to make the color you need, and ice away.

Wedding Cake Crunch Time 

It's too late to back out now!

A Week Before The Wedding

Bake your cakes and freeze them (you can do this a couple weeks ahead)

Make any decorations you are going to add to the cake such as flowers, or fondant shapes, or molded chocolate shells. (up to 2 weeks ahead if you have several items to design)

A Couple Days Before the Wedding

Ice your cakes or cover them with fondant.

The Day Before the Wedding

Finish icing the cake

Add the decorations.

The Day Of The Wedding

Put the final touches on the decorations.
Take the cake to the final destination, and assemble it.
Take along an emergency kit to repair any damage that may occur during transportation.

How Much Cake Do You Need?

If you use a box mix
1 cake mix will make 2 ~8" layers or 1 ~12" layer.

Stands, Stacks, or Tiers? 

When deciding how to display your wedding cake there are several options.

You can stack your wedding cake, but don't stack more than 3-4 layers. Use dowel rods cut off to the height of each layer, and pushed into the cake to support the layers.

You can also display your cakes in a tier. A tiered display is usually a combination of stacks and columns. The columns and stacks can be offset.

There are several varieties of beautiful stands you can use to display your wedding cake. Using a stand is actually the easiest method of displaying your cake. The best part about stands is the ability to decorate between the layers.

Important point: No matter how you are going to display your cake, do not put the layers together until the cake is at its final destination.

    Hi, I baked my own wedding cake long ago and still have the pans. Now I'm considering baking my daughter's. I would like to see: (1) real cake recipes here with amounts needed to fill various size pans; (2) advice about baking large layers - I remember it was tricky, but don't remember the tricks.
