Produce Prep. This is where it all starts. 

If you don't get this right your batch is shot.

First, inspect the fruit the make sure that the grapes are ripe and free of insects contaminants etc.

Put the grapes into a straining bag and take a measurement of the sugar level using a hydrometer.

The sugar density should be 22.

Be sure to remove the stems from all grapes in order to make your finished product sweeter and smoother tasting.

Adjusting the juice is a pretty crucial step in the wine making process.

You have to measure the acid content using a titration kit. The ideal level is 6.5 to 7.5 liters for white wine and 6 to 7 grams per litter for red wine.

You should regulate the sugar level by measuring it with your hydrometer periodically.

Recommended sugar level is 22 for both red an white wines.

Maintaining 70 degrees Fahrenheit for the basic red wines is ideal.

Great lens - 5 stars! I have a buddy who made over 600 bottles of homemade wine, even some from juice - and it was ok, and it was cheap, under $3 a bottle - but I'd have MUCH rather drank a $10 bottle, or a $20 bottle and LOVED it, than drank mediocre wine that after a few years, REALLY goes south! Natural Enemies of Making Great Wine 

Sometime we could see them, other times we need a microscope.

The natural enemies of making great wine are acetic bacteria and wild yeasts. Acetic bacteria is relatively present in the air and this bacteria is responsible for converting alcohol into acetic acid therefore thus turning a wine into a vinegar. Vinegar is great on my Old Bay Seasoned French fries but not in my glass of wine.

The water that we may use could contain harmful bacteria that can spoil the wine or introduces some wild yeast that lead to undesirable ferments. These ferments could give off a sour flavor to the batch.

Certain bacterial elements can be traced to things that we use during the process by which we make our wine. During storage process consider a fermentation lock.

Siphon, Bottling, & How to Store

Its nearly impossible to pour pure wine from one bottle to another without stirring up the deposit. It is recommended to siphon just from the clear wine at the time of bottling.

1 put bottle, jar, container of wine on a table and empty bottles on a box or stool on the floor.

2 with a yard and a half of plastic tubing put one end into the full container at the top.

3 suck on the other end until the wine comes.

4 as the wine comes through the tube to near pinch tube at your lips.

5 put end into empty container and let the wine flow.

6 As the empty bottle fills, slowly press the tube between finger

7 Repeat steps 5-6 if you have more bottles of wine.
