Make Cakes is all about being at one with baking. I love to bake and have just discovered cupcakes. Ah, the aroma of a cake baking in the oven. A walk in the park with a picnic lunch of cupcakes really helps to savour the sweet aroma of the great outdoors. I'm always on the look out for a fantastic posh cake recipe. Incredable mouth watering taste in every direction is a must have for decadent desserts to ease the stress and bussel of everyday life. Fresh healthy natural ingredients are a must for every good baker. I have adopted an eco philosophy of - think green, be green, and ice green. This has helped me be at peace with nature. It also helps if you're Irish!

Best Chocolate Cake Recipe
How To Make A Cake
- Serves: 8
- Prep Time: 45 min.
- Total Time: 2 hours
Ingredients
- Sugar 1 cup
- Butter 1 cup
- E ggs
- separated 4
- Dark chocolate 10 ounces
- Almonds
- ground 3/4 cup
- Cooked mashed potato 3/4 cup
- Self raising flour 2 cups
- Cinnamon 1/2 tsp.
- Milk 3 tbsp.
Instructions
1: In a large bowl; cream together butter and sugar until light and fluffy. Beat eggs yolks into creamed mixture one at a time until smooth and creamy.
2: Finely chop or grate 6 ounces (175 g) chocolate and stir into creamed mixture with ground almonds. Pass mashed potatoes through a sieve or ricer and stir into creamed chocolate mixture.
3: Sift together flour and cinnamon and fold into mixture with milk.
4: Whisk egg whites until they hold stiff but not dry peaks and fold into cake mixture.
5: Spoon mixture into a greased 9 inch (23 cm) pan. Bake in prehated 350 F (180 C) oven for about 1 1/4 hours or until a wooden toothpick inserted in centre comes out clean. Allow cake to cool slightly in tin; turn out and cool on wire rack.
6: Meanwhile, break up the remaining chocolate and melt over saucepan of hot water or microwave. Add 2 tablespoons (25 ml) butter and stir well until mixture is smooth and glossy.
7: Smooth chocolate icing on cake and allow to set.
