As a Sous Chef your ideas are unique and I'm gonna test them out to see if i like them for my own cooking at home and at work. Thank you very much.

Great lens, and a proper gravy recipe! I will for sure give this recipe a spin and see how it pairs up with my own.

My gravy sometimes turns out delicious, while others... well, you all know this sinking feeling, when the recipe has turned out all wrong... Fortunately, we have too many dogs in the yard!
    Amazing lens!

My mom always made the gravy (superbly!) for our family gatherings, and at Thanksgiving. Now that she's gone, we've had to settle for mediocre (or downright bad) gravy. Thanks for giving us hope! Maybe next time we'll have gravy that's actually good! Great lens!
  • the777group Dec 26, 2010 @ 7:11 pm | delete
Your recipe is pretty much mine but - I don't have a problem with weight - I've been experimenting with adding 1 frozen ice cube's worth of cream on special occasions and the family love it.
  • ohcaroline Dec 15, 2010 @ 4:15 pm | delete
My mom taught me to make gravy the same way. Mine is pretty decent. Thanks for sharing.
  • Nov 24, 2010 @ 3:30 pm | delete
My gravy has always been hit or miss. Some years it's perfect and some years it has been runny or lumpy. Thanks for all the good tips

    I take my turkey stuff it with all kinds of veges--whole tomatoes,whole carrots,whole celery,whole onions-quartered- a
tbsp of garlic-and astck and half of softend butter-- and sonme fresh herbs--like thyme, sage, and somd dried ground poultry seasoning. when turky done remove veges and discard- combinr drippings heavy ulra pasteruized whipping cream in a carton -dump into drippings --add 2 tbsp cornstarch to 1/4 cup of cold water keep stiiring until thickens--you may use salt to if you did not salt cavity of the turkey prior to cooking.

Now that doesn't seem that hard... I always make lumpy gravy. I thought gravy without lumps was a old wives tale. I am going to try to method and see if I can actually achieve gravy without lumps. thank you.

Making perfect gravy will add pizzazz to almost any dinner meal. Great photos, really enjoyed this lens.

The stepkids LOVE gravy and always get mad when I don't have it around. I learned that for storing it you can freeze it in ice cube trays, then bag once frozen to have on hand. Just pull out what you need.

Definitely counts, AJ. I've added your gravy to my Comfort Food group. It was already in the Culinary Favorites From A to Z group. Our groups would be thrilled to be lensrolled to your yummy perfect gravy recipe!
  • mysticmama Dec 26, 2009 @ 4:16 pm | delete
I use a strainer as well to get rids of lumps...and I've noticed I only get lumps if there is company eating over lol! Blessed!
  • paperfacets Nov 27, 2009 @ 3:22 pm | delete
I am reading this as I remember my lumpy gravy from yesterday's Thanksgiving turkey dinner. I usually use the strainer method. It was just the 4 of us in the family so I left it. Cooking is NOT my favorite thing to do. Good tips and stories to go with and thank you for the blessing.

Great lens and a very nice recipe. I like your flying gravy story so funny, not at the time I imagine. Of course a big fat 5...
  • jgelien Oct 24, 2009 @ 7:39 pm | delete
Perfect timing. I came across this lens with Thanksgiving right around the corner which of course means gravy and mashed potatoes.
    Wonderful tips. 5 stars.

I love to make milk gravy when we cook sausage or bacon - it's the same principle, cooking the flour in the fat to make a rouix, then adding the liquid and cooking until thick - but the liquid I use is milk. I think they call it "country" gravy in restaurants, but mostly you get white sauce with some sausage added in restaurants, and it probably comes out of a can at that.

Ever make "red eye" gravy with ham drippings and leftover coffee? I've seen the recipe dozens of times - it's often called a cowboy gravy - but I haven't ever actually tried it myself.

Nice lens, excellent instructions. This will help a lot of cooks learn gravy!

I'll have to try this recipe as I'm not too good at making gravy.

Gravy reminds me of my grandfather, who always made gravy for our family meals. My grandmother did almost everything else, but he had a knack for gravy (and cranberry relish). Very nice lens... Squid Angel Blessed.
  • JaguarJulie May 18, 2009 @ 1:59 pm | delete
Ah, gravy is sometimes like life -- you've got to take it with some lumps every once in a while. ;)
  • MsSnow4a May 17, 2009 @ 9:57 am | delete
Great lens, I alays have trouble with my gravy
  • CherylK May 16, 2009 @ 8:23 pm | delete
Excellent lens, as usual. Sorry about the gravy fiasco but at least it all turned out fine. I love that currant jelly tip. I almost always use wine or beer when I'm doing a roast in the oven. I put in an onion or two, let it roast slowly and you get the nicest drippings for gravy.
  • clouda9 May 15, 2009 @ 9:04 pm | delete
Gotta admit as much as I love to cook gravy is my real challenge! Thanks for the tips, especially the pics!

I love gravy although I have to admit that I do not make it very often. In my mind, there is nothing better than mashed turnips and carrots with turkey gravy and butter and salt. (Don't tell anyone!)
Excellent lens, AJ, blessed by Brenda!

Another great lens and I happen to be one of those odd people who can not eat anything unless it's smothered ( I mean smothered in gravy ), lately for the first time in my life I have been cooking and consider myself a dab hand at making gravy, just chuck in as much Bistro as I can and add boiling water. Watch out to all those chefs.
  • Joan4 May 10, 2009 @ 8:44 pm | delete
That gravy looks great! Can you also make tomato gravy? I'd sure love to learn how to do that, too! Sending this link to my daughter, too. She is always asking about gravy-making!

Can't have meat without gravy. It's just not done.
    Great lens

This lens is GREAT!! My mom made perfect gravy, yankee style. I learned to make southern gravy from my Kentucky mother-in-law who could cook a full meal on top of a pot bellied stove, including lumpless gravy. She fixed gravy for every meal, including breakfast.
    Loved the lens.
  • KarateKatGraphics May 8, 2009 @ 5:38 pm | delete
Good gravy makes a meal, doesn't it? Wonderful lens!
  • JaguarJulie May 8, 2009 @ 11:43 am | delete
Good gravy! This is a perfect gravy lens. I'm wondering how many cooks can say that they know how to make great gravy. Did you know, that when I make my stuffed cabbage that there is a type of 'gravy' that I add back to it to make the sauce thicker and give it its special flavor? Some cooks will make stuffed cabbage with tomato soup -- but that is NOT the best way! It really requires the 'perfect gravy' to make it tasty.
  • annetteghallowell May 7, 2009 @ 9:53 pm | delete
I love gravy! I have always considered myself a good gravy/sauce maker, but I can always use suggestions!

ROFL about the gravy incident! This is the way I was taught also and it works for me too, especially the part about adding wine...5*

My mom taught me to make gravy, using the same technique you shared here. No cook is worth her salt if she can't make a decent gravy. Making sauces can turn a ho-hum meal into something special.
  • GrowWear May 7, 2009 @ 7:11 am | delete
Yes, I do. Amazing for my being a self-professed non-cook. LOL I guess I can cook some things. Yay! But, now, not smooth every single time. Sometimes, life is just going too fast to concentrate. LOL. Lovely work here helping folks with their gravy. As usual, AJ, another striking addition to the Internet.
