Making Homemade Cookies

Sure, the cookies you buy at the store are okay. But homemade cookies are just so much better that there just is no real comparison.

Cookies are not hard to make at home. They just take some time and effort, but it is well worth it.

I want to share with you some tips on making cookies, and some of my favorite recipes.

Tips for making great homemade cookies. 

1) Read the recipe before you start making the cookies, and make sure you understand the instructions.

2) Bake one sheet of cookies at a time.

3) Ovens vary in temperature. Cook the first sheet of cookies as directed, then adjust the time as necessary for the rest of the cookies.

4) If the recipe calls for greased cookie sheets, spray the cookie sheets with some cooking spray, and spread it out with a paper towel. Or you can lightly rub the pans with shortening.

5) Unless the recipe says otherwise, remove the cookies from the cookie sheet immediately.

6) Cool the cookies on a wire rack completely before storing.

Basic Components Of Cookies 

Eggs: Eggs are an essential ingredient in cookies. they provide flavor and moisture to the cookies, as well as richness. Large eggs should always be used.

Flour: Flour provides the elastic framework necessary for the cookies to rise.

Leavening: Leavening ingredients are what make the cookies rise. Baking Soda and Baking Powder are used in cookie recipes.

Shortenings:Shortening, butter, and margarine add flavor and tenderness to cookies. Butter or margarine should be softened before use, but not melted.

Sugar: Both white and brown sugar add sweetness and texture to your cookies. Brown sugar adds a rich flavor to the cookies as well as sweetness.

To make the best cookies, you need a good cookie sheet. These will help you in making great homemade cookies.

Chocolate Chip Cookies 

This was one of my favorites growing up. Although quite a bit of the dough was eaten before we could get the cookies into the oven.

2 1/4 cups all-purpose flour
1 tsp baking soda
1 tsp salt
1 cup butter, softened
1/2 cup granulated sugar
1 cup brown sugar
1 tsp vanilla
2 eggs
1 12oz. package of semi-sweet chocolate chips
1 cup chopped nuts (optional)

Preheat the oven to 325 degrees F.

In a small mixing bowl, stir together the flour, backing soda, and salt.

In a large mixing bowl, comgine the butter, the sugars, and the vanilla. Beat until the mixture is light and fluffy. Add the eggs, and mix until combined.

Add the flour mix, and beat on low speed until the mixture comes together into a soft dough.

Stir in the chocolate chips, and the chopped nuts.

Drop the dough in heaping teaspoons onto ungreased cookie sheets, 2 inches apart.

bake for 8-11 minutes, until the edges are golden brown.

Chewy vs. Crispy 

Some like their cookies chewy, while others prefer theirs crispy. What do you prefer.

Oatmeal Rasin Cookies 

This is one of the first cookies I learned to make. I brought a batch of them to school one day, and my band director loved them.

1 cup seedless raisins
1 cup water
3/4 cup shortening
1 1/2 cups sugar
2 eggs
1 tsp. vanilla
2 1/2 cups flour
1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground cloves
2 cups rolled oats
1/2 cup chopped nuts (optional)

In a small saucepan, simmer the raisins and the water over low heat, until the raisins are plump.

While the rasins are simmering:

In a mixing bowl, cream together the shortening, sugar, eggs, and vanilla.

Add the flour, baking powder, baking soda, salt, cinnamon, cloves, oats and nuts, and mix thoroughly.

Drain the raisins, reserving the liquid. Add the raisins and 1/2 cup of the water to the mixing bowl, and mix thoroughly.

Preheat your oven to 400 degrees F.

Take two spoons, and drop the dough by rounded spoonfuls onto an ungreased cookie sheet, two inches apart.

Bake the cookies for 10-12 minutes, until the edges are golden brown.

Transfer the cookies from the pan to a cooling rack, and let cool before transferring the cookies to cookie jar.

Makes about 2-3 dozen cookies.

No Bake Cookies 

These no bake cookies certainly bring back memories for me. I remember sitting at home with a cold, while my mom was in the kitchen making these cookies.

1/2 cup margarine
2 cups sugar
1/2 cup milk
3 Tbsp. cocoa powder
1/8 tsp. salt
3 cups oatmeal
3/4 cup peanut butter
1 tsp vanilla extract

In a medium saucepan, combine the margarine, sugar, milk, cocoa powder, and salt. Bring to a boil, stirring occasionally. Boil for 1 minute.

Remove the pan from the heat, and add the oatmeal, peanut butter, and vanilla. Mix well.

Spread the mixture into a 8x8 inch pan and chill.

Peanut Butter Cookies 

1 cup shortening
1 cup brown sugar
3/4 cup granulated sugar
2 eggs
1 cup peanut butter
2 cups flour
2 tsp baking soda
1/2 tsp salt
1 cup oats

In a large mixing bowl, combine the shortening, and the sugars. Add the eggs and peanut butter, and mix well.

In a small mixing bowl, combine the flour, baking soda, and salt. Add to the sugar mixture, and mix well. Stir in the oats.

Break off pieces of dough, and roll them into 1 inch balls. Place them 2 inches apart on an ungreased cookie sheet.

Bake at 350 degrees F. for 8-10 minutes.

Makes 6 dozen cookies.

Banana Chocolate Chip Cookies 

This is a recipe that I came up with, while I was experimenting with a basic chocolate chip cookie recipe.

1 medium banana, mashed
1/2 cup butter
2 eggs
1 cup white sugar
1 cup brown sugar
1 teaspoon salt
1 teaspoon baking soda
1 1/2 cups rolled oats
2 3/4 cups flour
8 oz. semisweet chocolate chips
1/2 cup chopped walnuts (optional)

Preheat oven to 350 degrees

In a large mixing bowl, combine the banana, butter, eggs, white sugar, and brown sugar.

Add the salt, baking soda, oats, and flour, and mix well.

Stir in the chocolate chips and walnuts.

Drop dough by heaping teaspoons 2 inches apart on an ungreased cookie sheet.

Bake for 12-15 minutes, and remove from the oven.

Makes 5 dozen cookies.

Apple Carrot Cookies 

1/2 cup shredded apple
1/2 cup shredded carrot
1/2 tsp lemon juice
1 c. packed brown sugar
1 c. butter or margarine
1 egg
1 tsp. vanilla
2 1/2 c. oats
1 1/2 c. flour
1/2 c. shredded coconut
1/2 tsp baking soda
1/2 tsp ground allspice

Preheat oven to 375 degrees F.

Squeeze as much juice out of the shredded apple as possible. Toss the apple with the lemon juice and set aside.

In a mixing bowl, combine the brown sugar, butter, egg, and vanilla. Beat on medium speed until fluffy.

Add the oats, flour, coconut, baking soda and allspice. Beat on medium speed until well combined. Add the carrot and flour, and mix to combine.

Place the dough by heaping teaspoonfuls 2 inches apart onto an ungreased cookie sheet. Bake at 375 F. for 10-12 minutes until golden brown.

Makes about 6 dozen cookies.
