Butterscotch is a category of confectionery whose chief ingredients are brown sugar and butter.  However, several other ingredients such as, cream, corn syrup, vanilla, and salt are part of many recipes.
 
The ingredients for butterscotch are somewhat like toffee, but for butterscotch the sugar is boiled to the soft crack stage (not hard crack as with toffee). One of my favorite toppings for ice cream is a Butterscotch sauce often made into a syrup, which makes a delicious Sundae!
 
Mama Ruby's recipe uses the flavor of brown sugar and butter together giving it the butterscotch savor which melts in the mouth with a crescendo of flavor.  I know I am prejudiced, but if you like butterscotch you will love this.

Recipe good for one pie, but works better if doubled!

What to use:

3 tablespoons flour
pinch of salt
1 packed brown sugar
1 teaspoon vanilla
3 egg yolks (Save whites to make meringue - see below))
2 teaspoons Crisco
2 cups whole milk (or half & half)

What to do

Mix sugar, pinch of salt salt,egg yolks and flour
Place milk in top of double boiler; heat to near boil
Add sugar mixture
Stir and cook constantly until thick
Add Crisco and vanilla
Simmer under low heat for 20 minutes
Pour in 9 inch baked pie shell
Cover with meringue (See meringue instructions below)
Brown at 375 for 3 to 5 minutes

How to make meringue

# Separate the Egg yolks from whites
# Add cream of tartar
# Beat Egg Whites to Soft-Peak Stage
# Add 6 tablespoons Sugar Tablespoon by Tablespoon
# Beat Until Stiff Peaks Form
