Corn Meal Pie, Corn Meal Cake, and Other Cornmeal Desserts Here!

When I think of corn meal pie (Or chess pie) I think of the good ole days. My grandma's church held annual homecoming dinners outside with at least one large homemade plank-wood table filled with a plethora of desserts. Among these sweet delights were these cornmeal pies. They were not the most fancy pies, but they were one of my favorites, This lens gives on of these recipes that my Mama Ruby used to prepare. I give it to you by her permission. I also include many other recipe links for corn meal desserts, I also include the cornmeal cake recipe I think you will enjoy!

Mama Ruby's Cornmeal Pie Recipe

2 Large Eggs
1/2 Cup Sugar
1 Cup Packed Brown Sugar
3 Tablespoons Melted Butter
3 Tablespoons plain cornmeal
Dash of Salt

Preheat oven to 350
Mix Well
Pour into 8 inch pie shell
Bake (about 30 minutes or until knife blade comes out clean)

HOW TO MAKE A JOHNY CAKE

1 egg
2 c. white or yellow cornmeal
1 tsp. salt
1 1/4 to 1 1/2 c. milk

Beat 1 egg. Stir in 2 cups white or yellow corn meal, 1 teaspoon salt, 1 1/4 to 1 1/2 cups milk (to make batter thick). Drop spoonfuls of batter onto a well-greased hot griddle and fry to a golden brown on each side. Stir batter occasionally to keep well mixed. Serve hot with butter.

Makes 12 Johnny cakes.

How To Make a Cornmeal Cake!

* 1 cup self rising flour
* 1/2 cup vegetable oil
* 1 cup milk
* 4 eggs
* 2 cups sugar
* 1 cup cornmeal

Preheat oven to 350 degrees (F)
Lightly Butter a 12 inch cake pan
Extract egg yokes and mix with oil and sugar
Heat milk to near boiling
In another bowl pour milk over cornmeal and mix well
Combine with egg mixture
Sift flour and add to mixture
Take the egg whites and whisk
Fold whisked whites into mixture
Pour into bake pan and bake for about 30 minutes or until knife comes out clean.

Serve with hot coffee or tea!
