What is cornmeal pie?
Cornmeal, chess and vinegar pies are all very similar. The recipe I give contains no vinegar or vanilla, but you experiment with any of these variants!
Chess pie is a dessert characteristic of Southern U.S. cuisine. Recipes vary, but are generally similar in that they call for the preparation of a single crust and a filling composed of eggs, butter, granulated sugar, brown sugar and vanilla. What sets chess pie apart from many other custard pies is the substitution of corn meal for flour. Some recipes also call for corn syrup, which tends to create a more gelatinous consistency. Mama Ruby's Cornmeal Pie Recipe
2 Large Eggs1/2 Cup Sugar
1 Cup Packed Brown Sugar
3 Tablespoons Melted Butter
3 teaspoons plain cornmeal
Dash of Salt
Preheat oven to 350
Mix Well
Pour into 8 inch pie shell
Bake (about 30 minutes or until knife blade comes out clean)

1 1/4 to 1 1/2 c. milk
Beat 1 egg. Stir in 2 cups white or yellow corn meal, 1 teaspoon salt, 1 1/4 to 1 1/2 cups milk (to make batter thick). Drop spoonfuls of batter onto a well-greased hot griddle and fry to a golden brown on each side. Stir batter occasionally to keep well mixed. Serve hot with butter.

How to make chess pie! - With a bit of humor!
How To Make a Cornmeal Cake!
* 1 cup self rising flour* 1/2 cup vegetable oil
* 1 cup milk
* 4 eggs
* 2 cups sugar
* 1 cup cornmeal
Preheat oven to 350 degrees (F)
Lightly Butter a 12 inch cake pan
Extract egg yokes and mix with oil and sugar
Heat milk to near boiling
In another bowl pour milk over cornmeal and mix well
Combine with egg mixture
Sift flour and add to mixture
Take the egg whites and whisk
Fold whisked whites into mixture
Pour into bake pan and bake for about 30 minutes or until knife comes out clean.
Serve with hot coffee or tea!
