Baking Mango Bread - Fresh Mangoes are Key!

During the years we have a good crop of mangoes, I bake a lot of mango bread. Undoubtedly, the best way to eat a mango is freshly picked with the juice running down your chin, but try this easy bread recipe when you're ready. It's a delicious mango bread recipe and the next best thing to simply eating a piece of the just-picked fruit.

Mango Bread Recipe Ingredients

Step 1 - Select the Best Mangoes

Fresh mangoes are always best.

Fresh MangoTo make mango bread, pick two medium sized ripe mangoes from the tree or purchase fresh at the market. Squeeze the fruit firmly; if it gives slightly, it's ready to eat. Sniffing the fruit where the stem is (or was) for a fragrant fruity smell is another way to tell if the fruit is ready.

Step 2 - Mango Bread Recipe Fixins'

Mango Bread Fixins'Gather together all the ingredients for the mango bread. Ensure you have everything before you start. Preheat oven to 350 degrees with oven racks in the middle position.

Step 3 - Mango Bread Recipe

Sift dry ingredients for making mango bread.

Making Mango BreadIn a large mixing bowl , sift together the dry ingredients, the flour, sugar, baking soda, cinnamon and salt. If you don't have a sifter, use a strainer by gently shaking side to side over the bowl.

Step 4 - Mango Bread Recipe

Peel, dice, whisk

Step 4 - Making Mango BreadPeel and dice mangoes and put in a separate mixing bowl from the dry ingredients. Whisk together the eggs. Add eggs, oil and lemon juice to bowl with mangoes and mix well.

Step 5 - Mango Bread Recipe

Chop almonds for mango bread.

Chopped Almonds for Baking Mango BreadCoarsely chop almonds and add to the dry ingredients. Mix this well. Make a hole in the center and pour mango mixture in this. Mix by hand until all the dry ingredients are absorbed.

Step 6 - Baking Mango Bread

Mango Bread - Ready for OvenUsing spray oil, butter or Crisco shortening, grease and flour the sides and bottoms of baking pans. Pour batter into pans until they are 3/4 full. Place on middle rack in the 350 degree oven.

Baking time depends on the number and size of baking pans:
Bake 35-40 minutes for four small baking pans.
Bake 50-60 minutes if using two standard size baking pans.

Check if mango bread is ready by inserting a bamboo skewer or toothpick into center of each loaf. Remove bread when skewer is dry and outside of bread is nice and brown.

Oven baking times vary. Watch loaves carefully when baking for the first time.

Fresh banana mashed can be substituted for mango if desired.

Step 7 - Enjoy Your Freshly Baked Mango Bread

Mango bread in the morning....or anytime!

Freshly Baked Mango BreadRemove loaves from oven. Turn pans upside down and catch loaf in other hand. Set on cooling racks.

Slice and serve mango bread for breakfast with more fresh fruit and a cup of coffee. Skip the butter or margarine as it's not needed here. Enjoy!

    I found fresh mangoes like eating perfume, but maybe I would like them better this way.

    I love mangoes and when it is mango season, I can't think of a better way to use up excess mangoes than to bake mango bread! Yum! I also like to add a pinch of allspice to the batter and use walnuts or pecans instead of almonds. Any nuts that are available are excellent, IMHO (in my humble opinion). Well done and angel blessed.
