Mark Bittman is a well-known American cookbook author and food writer. He lives in New York. He is not a trained chef, but came to cooking through journalism.
Bittman writes the New York Times weekly column "The Minimalist" and is the author of numerous award-winning cookbooks including How to Cook Everything, Fish: The Complete Guide to Buying and Cooking, and the Minimalist Cookbook series. In 2005, he launched a PBS series to accompany How to Cook Everything. An ambitious food writer, he has also published The Best Recipes in the World: More than 1000 International Dishes to Cook at Home and his most recent work How to Cook Everything Vegetarian.
The online edition of the New York Times regularly contains video segments to accompany Bittman's "Minimalist" column. The segments emphasize Bittman's informal approach toward cooking and are deliberately under-produced, often featuring minor mishaps or delays that many producers would have chosen to edit out. Each segment ends with Bittman beginning to eat whatever he has just cooked.
Bittman is a regular guest on The Today Show, has appeared on other radio and television programs, and been profiled in national newspapers.
Though a non-vegetarian himself,TED Talk: Whats wrong with what we eat he is known for his criticism of too much consumption of meat and its ill effects on health of humans and the planet at large.

In late 2007 and early 2008 he filmed Spain... on the Road Again, a 13-episode PBS food travelogue, with Mario Batali, Gwyneth Paltrow, and Claudia Bassols. The series began airing the week of September 20, 2008.

The Minimalist Cooks Dinner
We love to cook, but often don't have the time to prepare complex meals. Fortunately, Bittman's _Minimalist_ has allowed us to expand our culinary horizons, without a great deal of effort.
The Roast Salmon Steaks with Pinot Noir syrup was marvelous. The salmon and Pinot sauce worked well together; the easy-to-cook syrup would work well with a variety of meats. The recipie called for only 7 ingredients, and preparation was a snap.
I'm not usually an eggplant fanatic, but the Chicken Breast with Eggplant, Shallots and Ginger was really tasty. Once again, preparation was painless, the list of required ingredients was short, and the results were impressive.
As other reviewers have noted, this is *not* an encyclopedic, Joy of Cooking-replacement, but is rather an excellent way to expand your cooking repertoire with quick, healthful dishes. We haven't been disappointed yet. -- hassnick, Madison, WI USA

The Minimalist Cooks at Home: Recipes That Give You More Flavor from Fewer Ingredients in Less Time
I began flipping through this book when it first arrived and found myself driven to read it cover-to-cover. Mark Bittman's approach is like having a food mentor in my very own kitchen. Providing the right amount of information about the ingredients and the process PLUS ideas for modifying the recipes to suit the contents of your refrigerator is incredibly helpful. His practical, down-to-earth method is more like great coaching--informative and inspiring!
The Lemongrass-Ginger Soup on page 16 pleased everyone in my soup loving family (which includes two teenage boys). Mark's section called "With Minimal Effort" includes multiple ways to enhance/modify every recipe. And did I mention the Pasta & Potatoes recipe, page 59? Seasoned chefs may shudder but I have to say, it's a slice of heaven if heaven serves comfort food.
