Cherry Chocolate Cupcakes
- Serves: makes 2 dozen cupcakes

This is a Chocolate Cherry Cupcake recipe from Allrecipes.com that I modified. It is so easy, and everyone seems to love them!
Ingredients
- 1 (18.25 ounce) box chocolate cake mix
- 1 1/3 cups water
- 1/2 cup vegetable oil
- 3 eggs
- 1 can cherry pie filling
- 1 (16 ounce) can vanilla or cream cheese frosting
- sanding sugar
Instructions
In a mixing bowl, combine cake mix, water, oil and eggs; mix well. Pour your batter into 24 paper-lined muffin cups. Then use a spoon to put one cherry and just a bit of the filling center of each cupcake. Set remaining pie filling aside. Bake according to cake mix directions or until a toothpick inserted on an angle toward the center comes out completely clean. Remove to a wire rack to cool completely. Add enough pie filling liquid to tint your icing; frost and add sanding sugar for sparkle.
I went with a Mary Engelbreit " Bloom Where You Are Planted Theme " and placed the cupcakes in little pots as the photo illustrates.
