Mouthwatering Maryland Crab Cake Recipe
Sounds delicious... doesn't it? Trust me, they are.
My husband has been a Chef and basically a Culinary Genius his entire life, and lucky for me, since I married him.
Prior to opening our Steak and Seafood Restaurant, my partner/hubby and I set out on a mission to find the best Crab Cakes. Living on the East Coast, we had a lot of excellent resources. We began our quest and headed north to the New England Area continuing back to New York City all the way down to the shores of the Chesapeake. It was in Baltimore Inner Harbor, our hair stood on end when we sunk our teeth into our first Maryland Style Crab Cake. We continued our taste test all through Maryland up and down the bay.
Our final conclusion, Maryland is the place to get an awesome Crab Cake.
Our Inner Harbor experience was 20 years ago and my husband has been fine tuning his Crab Cake recipe for years and introduced it in its purist form 7 years ago with the opening our Steak and Seafood Restaurant, Stoned Crab. How do you prefer your Crab?
Jumbo Lump Crab
Use a high quality crab like Jumbo Lump, it is a pleasure to work with because you will most likely not find any shells. Cheaper Crab like Backfin you will have to pick out enormous amounts of shells. We recommend ONLY using high quality Crab Meat, like Jumbo Lump. We use a Colossal Lump which is hard to find but is the Ultimate Crab Meat available. Also we prefer Maryland Jumbo lump Crab.

Maryland Crab Cake Recipe
This mixture is straightforward and easy to make, and can be used for Stuffed Mushrooms, Stuffed Shrimp, Mini Crab Cakes and Stuffed Fish.
You will love this Maryland Style Crab Cake Recipe for its ease and just wait until you sink your teeth into one of these babies.
Ingredients
- 1 Large Egg
- 2 Lemon wedges (juice only)
- 3 tsp Old Bay Seasoning
- 3 tsp Dijon Mustard
- dash Worcestshire Sauce
- 1 Tbl Pimentos (1/4 inch dice)
- 1 tsp Baking Powder
- 1/2 c. Mayo
- 1/2 c. White Sauce (* see white sauce recipe)
- 2 tsp Parsley 2 tsp (minced)
- 3 tsp Scallions (green- thin sliced)
- 1 lb Crab (jumbo lump)
- 1/3 c. Panko bread crumbs
- *****************************************
- WHITE SAUCE * ingredients
- 1/4 c. Milk *
- 2 tsp Flour *
Instructions
- Traditionally, White sauce is made with a butter roux, but for simplicity and this small amount , we will use this. In a small sauce pan, (my husbands favorite is the Stir Fry Pan listed below.) mix the milk and flour well using a Wire Whip. (he uses a Wire Whip with Stainless Steel Balls on the end, also listed below.)
- Cook on medium low for 5 minutes, stirring constantly with the whip. It will become thick. Remove from heat.
- Using a suitable mixing bowl, combine all ingredients except the crab and Panko crumbs.
- Open the crab and drain well, do not rinse. Fold the crab and panko with wet mixture, cover and refrigerate for 1/2 hour.
- Portion to size, and light coat 2 flat sides with flour.
- Saute' on medium low in butter for 2 to 3 minutes per side.

My husbands favorite pan to whip up sauces and whatever else, so versatile and a pleasure to use. The bottom has a low heat surface so it heats up in a flash and because of the shape of the pan the heat rolls up the sides of the pan nicely ensuring even cooking. What is Panko?
Panko is a very flaky type of bread crumb used in Japanese cuisine. The bread used to make Panko is crispier, and the texture is airier then most breads. Panko bread goes through a special process, this bread dough is baked through an electric current.
