Medifast Lean & Green Recipe: Orange Almond Duck Stir Fry

We're allowed to eat duck???
YES!! I called MediFast twice to ask, and both times I was told that I can have 7oz. of duck breast, which puts it in the leanest category. If you're like me, you're going to look at all that fat on the duck and think I'm nuts, so feel free to call up the MediFast support people to check.
By the way, you'll need to buy a wok
for this recipe, if you don't have one then check this one out, it's cheap and good because it's not non-stick, it's carbon steel, flat bottomed and just big enough without being overwhelming.

Ingredients:
The yummy raw stuff we turn into yummy cooked stuff!
Prep time: 10 - 15 minutes(marinate meat overnight)
Cook time: 15 - 20 minutes
7 oz. Duck breast or other wild game meat (leanest, confirmed by MediFast nutritionist)
1 can Diet orange soda (enough to cover meat during marinade)
1 tsp Sesame oil (1 healthy fat)
½ oz. Sliced Almonds (1 healthy fat)
¼ tsp fresh Garlic - finely chopped (¼ condiment) (or ¼ tsp garlic powder)
1 tsp fresh Ginger root - finely grated (½ condiment) (or ¼ tsp dried ground ginger)
¼ cup fresh Basil (¼ condiment) (or ¼ tsp ground basil)
2 tbsp Chives - coarsely chopped (1 condiment)
1 tsp No sugar added soy sauce (1 condiment)
¼ cup portabella (or white) mushrooms
¼ cup mung bean sprouts
¼ cup asparagus tips
¼ cup broccoli (bite sized pieces)
¼ cup cabbage (shredded)
¼ cup mixed orange and yellow peppers (slivered)
This makes 1 Lean & Green meal
Choppin' The Veggies!

Cut all of your veggies into nice bite sized pieces. I used two bowls, one for the broccoli, asparagus, cabbage, basil and sliced almonds, and another for the mushrooms, peppers, and sprouts. When I make it again I'll probably put the basil in the second bowl because it's pretty delicate and I think it would have been a bit better if it wasn't cooked as long as the heartier vegetables.
Next put in sesame oil, garlic, chives and ginger into the wok.

Lets Get Wokking!
Cooking the duck...
Discard the orange soda (don't worry about getting the duck dry, a little soda won't hurt if it goes in the wok).
Heat up the wok and put in the sesame oil, garlic, chives and ginger and stir in the duck (or other wild game meat) until it's lightly done throughout. The wok should be nice and hot, probably around 8 - 9 on your stove.

When you're stir frying, it's WAY easier if you have the right tools. This shovel looks pretty good:

Let's get those veggies cooked!
Put the first set of veggies into the wok, stir in gently but firmly. Bring the heat down to about 5 or 6 on your stove and cook for about 5 - 7 minutes or until the veggies are almost done. You can taste test it, the veggies should be JUST starting to get nice and crisp, but nowhere near mushy!

Now the first set of veggies you put in should be just about done and you'll put the last of your ingredients into the stir fry. Pour the peppers, mushrooms and bean sprouts into the wok and gently fold them into the stir fry. Turn the stove back up to around 7 to 9 so that you get a good, fast searing of the peppers. This will keep the mushrooms and sprouts from getting mushy as well. Cook for another 5 to 7 minutes until everything is done (taste test, veggies should be slightly crisp), then pour off almost all of the duck fat (this is personal preference, more or less fat is up to you). Finally, take the wok off of the heat and pour in the soy sauce. Toss the ingredients with the soy sauce until everything is nicely coated.
Serve hot!

Ouch, don't get burned!
Now I'll admit I used to just try to scoop out the food while leaning the wok over a plate, but after several burns I learned to use the right tools!
A ladle is really useful for serving stir fry since it grabs up the sauce along with the food.
