There are a couple of visual distinctions alone which mark Melton Mowbray Pork Pies as separate from pork pies of other types.The first is the shape of the actual pie itself. Melton Mowbray Pork Pies are baked free standing, not in a ring or mould, therefore they have a shape perhaps not unlike a pot-bellied stove, where they bulge outwards during the cooking process.
The second difference is in the colour of the meat in the pies. Melton Mowbray Pork Pies are made from natural, chopped pork and therefore the meat is slightly grey in colour, whereas other pork pies (such as the one pictured above right) are made from cured, minced pork, giving a distinctly pink colour to the finished article.

- I love Pork Pie and live just up the road from Melton Mowbray in south Notts. As a student I worked in a Pork Pie factory. Pork Farms to be exact. i was doing nights there the night Elvis died! I turned out circa 10,000 pies a day. If you fell foul of the manager you were sent to the .....oh no....The Jelly Room. Not a room that wobbled but one where you put the clear glycerine into the pies after they were baked with a special 'water pistol'. The jelly was used to stop the meat oxidizing. Happy days!
