I'll be home for Christmas. Home is where my heart is. Most of my brothers and sisters are in Canada, one in the U.S. and two in the Philippines. My husband is in Malaysia. This is my wish but I cannot go home this time. I will be spending my Holidays with my husband.

BASIC GINGERBREAD DOUGH
- Serves: 15 pcs.
- Prep Time: 15 mins.
This is the basic Gingerbread Dough which can be used to make some Christmas Cookies in form of Stars, Christmas trees, Animals and of course, St. Nick figures. Make the Dough as you wish and need.
Ingredients
- 3750 ml Water
- 3000 g Sugar
- 7500 g Honey
- 7500 g White Flour
- 2250 g Rye Flour
- 30 Tsp. Gingerbread mixture
- 15 Tsp. Baking Soda
- 15 Tsp. Potash
Instructions
1) Mix Water and Sugar and boil up. Add Honey and heat it up again. When done, let the Honey mixture cool off.
2) Mix White Flour, Rye Flour and Gingerbread mixture in a Bowl then pour the Honey mixture into it. Mix them well.
3) Put Baking Soda and mix again.
4) Finally, dissolve the Potash with a little bit of Water and pour into the Dough. Mix again.
In case the Dough is too hard, add some Honey. In case the Dough is too soft, add some Flour. Now, you can form the Figures you want to bake for Christmas.
ST. NICK GINGERBREAD
- Serves: 15 pcs.
- Prep Time: 90 min.
- Total Time: 1.45 hrs.
Ingredients
- around 1500 g Gingerbread dough
- Egg White and Confectioner's Sugar for Icing
- peeled and halved Almonds and Walnuts for Decoration
- 200 g Marzipan
- Yellow and Red Food coloring
- melted dark Chocolate
- Sugar Pearls
- Flour
- Milk for brushing
Instructions
1) Pre-heat Oven with 160°C. Sprinkle the working area with a little bit of Flour and roll out Gingerbread Dough with Rolling Pin up to 6mm thickness.
2) Lay some Parchment papers into the Baking pan. Make some squares or rectangles (around 15 x 5 cm) or triangles and lay them in the Baking pan. Make sure to decorate the Coat of St. Nick with Almonds and Walnuts. Brush Gingerbread figures with Milk and bake for 15 minutes. Take the Pan out and let it cool off.
3) Use Food coloring to color Marzipan. Knead them well. Yellow for the Hat and Red for the Face (but will turn into Pink when mixed with Marzipan).
4) Roll out the Yellow Marzipan until you get 5mm thickness and cut out some Bishop hats.
5) For St. Nick's faces, roll out the Pink Marzipan until you get same thickness which is 5mm. Cut out some Face figures. Connect Face and Hat and fix it to the Gingerbread. Decorate the Hat with Sugar Pearls. To make the eyes, make 2 shallow dents using a toothpick for each Face and fill with melted dark Chocolate for dark eyes and some Icing for white eyes.
6) To make the Icing, mix Egg white and Confectioner's Sugar well. Put the Icing in the Decorating bag and decorate the Figures with white Beard icing. Decorate the Figures like in the Intro Photo.
Tip: To make the Gingerbread stay soft, put 1 pce. of sliced Apple inside the Cookie Tin Box.
EDIBLE CHRISTMAS ORNAMENTS
- Serves: 25 pcs.
- Prep Time: 90 min.
- Total Time: 1.45 hrs.
One can use Gingerbread Figures as Christmas Ornaments provided that these Figures have holes in them where one can put the thin, colorful satin Ribbons for hanging. Please copy how the Figures are decorated in my Recipe Photo.
Ingredients
- around 1500 g Gingerbread Dough
- For Sugar Icing >30 g Egg white / 200 g Confectioner's Sugar / Red Food coloring
- For Decoration > peeled and halved Almonds / Walnuts
- Sugar Pearls
- Flour
- Milk for brushing
Instructions
1) Pre-heat Over with 160°C. Sprinkle some Flour over the working area and roll out the Gingerbread Dough into 6 mm thickness.
2) If you have some Tin Christmas Figure cutters, use them to make Christmas trees, Animals and Stars or whatever. Take a BBQ wooden Skewer and make 1 hole on each figure. Decorate the Figures with Almonds and Walnuts. Put these Figures in a Baking Pan with Parchment Paper on it. Brush each Figure with Milk and bake for 15 mins. When done, take the Baking Pan and let it cool off.
3) To make the Icing, mix Egg white and Confectioner's Sugar. Divide the Icing. Add some Red Food coloring into 1 portion and leave the other portion as it is, white. Put the Icing into a Decorating bag and decorate the Figures as you like. Decorate with Sugar Pearls too.
Important Note: If you ran out of Icing, order from Amazon.
Special Tip: To avoid the Gingerbread to become hard, put a sliced Apple inside the Cookie Jar. Gingerbread will become soft.

We celebrate Jesus' Life from Mary's Immaculate Conception, His Birth, visit of the 3 Wise men (Epiphany), His Sufferings, Death and Resurrection, His Ascension to heaven, the Holy Pentecost and Corpus Christi (Body of Christ).
The story goes like this: Mary was married to Joseph and Elizabeth was her sister. An Angel of God visited Mary and announced, Hail Mary! Full of grace, the Lord is with Thee, Blessed art thou amongst women and blessed is the fruit of thy womb...(Jesus). Same thing happened to Elizabeth, an Angel of God also visited her. She bore John the Baptist. Mary's Immaculate Conception is always celebrated on 8th of December.
In some countries, some carolers sing songs from door to door before Christmas and the owners of the households donate some money or gifts. All Roman Catholics celebrate Christmas Day on the 25th of December, we exchange gifts but we forget that it is Jesus' Birthday. He was born in a manger in Bethlehem since nobody gave Mary and Joseph proper accommodation. Actually, we should sing Happy Birthday, Jesus! Happy Birthday, Jesus! Happy Birthday, Happy Birthday, Happy Birthday, Jesus! Tra-la-la!
In some countries like the Philippines, the Day of the Innocents is celebrated on 28th December. This is to commemorate the innocent slaying of many male children under two years old ordered by King Herod. The 3 Wise men were following the bright star which was brightly shining on a stable where Mary, Joseph and Jesus were staying. They brought with them Gold, Frankincense and Myrrh. Gold was fit for a King, Frankincence symbolized humility and Myhrr came from a THORNY shrub. Oh, Uh! Gift from a thorny shrub and thorns on Jesus head during His Passion, what a coincidence! After the visit of the Magi, the killer commando was looking for the holy family but they left and fled to Egypt. Jesus was seen as a threat to Herod's throne.
The 6th of January is Christmas Day of the Orthodox Christians but it is the Roman Catholics' remembrance of the visit of the 3 Wise men or Kings or Magi. In most European countries, there are carolers dressed up like 3 Wise men who knock from door to door. They will recite some prayers and afterwards, one of them will write with a chalk 20 + C+ M + B + 12 on the door. 20 in front and 12 at the end stand for the year. C stands for Caspar, M stands for Melchior and B stands for Baltazar. The money collection will be donated to the church help organizations. It is believed that the skull relic remains of the 3 Magi could be found in Cologne Cathedral, Germany. The skulls were brought by the Templar Knights from the Orient after they conquered Jerusalem.
