Recipe Directions:
Quick and Easy Mexican Black Beans
- Serves: 4
Ingredients
- 1/3 cup light brown sugar
- 2 minced garlic cloves
- 4 drained cans black beans
- 1 teaspoon ground ginger
- 2 diced jalapenos
- 1 large can diced tomatoes
- 2 finely chopped onions
- 1/3 cup honey
- 2 tablespoons olive oil
- 1 teaspoon salt
Instructions
Saute the onions in the oil for 15 minutes or until tender and golden brown.
Stir often so the onions do not burn, adjusting the heat as needed.
While the onions are cooking, mix together the black beans,diced tomatoes, brown sugar, ginger, honey, and salt.
Add the jalapenos and garlic to the onions, and cook another 5 minutes.
Add this mixture to the pot of beans and mix well.
Let the beans simmer for 20 minutes stirring every few minutes.
