Mexican Breakfast Taco
Every morning you are busy getting the kids up for school, packing their lunches, and fixing breakfast and you still have to get dressed for work yourself! Wouldn't it be nice to be able to skip just one of those steps and enjoy an extra cup of coffee or two before you have to rush out the door to work?
Well, you may not have realized it but we read your thoughts and have come up with a wonderful breakfast taco that gives your family everything they need to start their day. Even better, you can munch on one on your way to work too!
To make these Mexican breakfast Tacos you will need, chorizo, eggs, salt, pepper, milk, Monterey jack cheese, hot sauce, salsa and corn or flour tortillas. Cook according to directions. This recipe makes 8 servings. On the weekend you could make up several of these Mexican Breakfast Taco recipes and freeze for a weekday when you are rushed for time.

Directions for Mexican Breakfast Tacos
Just follow these quick and easy recipe directions

- Serves: 4
- Prep Time: 5 Minutes
- Total Time: 15 Minutes
Ingredients
- 6 oz chorizo
- 8 small corn tortillas
- 1 cup shredded Monterey Jack cheese
- 1/4 cup milk
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 6 eggs
- 1 dash hot pepper sauce
- 1/2 cup salsa
Instructions
Crumble the sausage into a skillet over medium-high heat. Cook and stir until browned.
Heat a skillet over a medium heat, and heat another skillet over a high heat.
The skillet over the high heat is for warming your tortillas.
In a medium bowl, whisk together the milk, eggs, salt and pepper.
Spray the medium heat skillet with cooking spray and then pour in the eggs. Cook and stir until almost firm.
Add the sausage, and keep cooking and stirring until firm.
Meanwhile, warm the tortillas for half a minute per side in the other skillet, so they are hot and crispy on the edges, but still pliable.
Sprinkle some shredded cheese on to each tortilla while they are still hot and top with some of the scrambled egg and sausage.
Add hot pepper sauce and salsa to your liking.
