I have spent several years cooking in a Mexican restaurant. I must have cooked a million sopapillas in those years. I am proud to share this recipe we used to make our Mexican Sopapillas. These Sopapillas come out of the oil nice and golden and fluffy! Great with honey or maple syrup and powdered sugar sprinkled on top! Mexican sopapillas recipe your whole family will love! Easy Mexican Sopapillas Recipe

This is a very easy recipe for Mexican Sopapillas

Mexican Sopapillas are very easy to make using basic ingredients most people already have in their homes. The following recipe for Mexican Sopapillas is very quick to make and the kids will have a great time if you let them help! Sprinkle the Mexican Sopapillas with some powdered sugar and drizzle some honey on them and you have a great tasting dessert that is quick and easy to make!

Mexican Sopapillas Recipe Ingredients

Gather these ingredients for Mexican Sopapillas

~ 1 pkg. dry yeast
~ 1/4 c. lukewarm water
~ 3/4 c. milk
~ 6 tbsp. sugar
~ 1 tsp. salt
~ 2 tbsp. butter
~ 1 egg, beaten
~ 3 c. flour
~ Approximately 2 inches of vegetable cooking oil

Soften yeast in lukewarm water. Set aside.
Combine milk, sugar and salt. Bring to a boil. Remove from heat. Stir in butter. Allow to cool until lukewarm.
Stir in beaten egg and yeast mixture. Gradually add flour.
Work with hands if mixture becomes too thick to stir. Cover dough with a damp cloth and allow to rise until doubled in size, about 1 1/2 hours.
Punch down, turn out onto a lightly floured board, knead briefly until dough is smooth.
Cover and let rest for 15 minutes. Roll to about 1/2 inch thick square and cut with a 2 inch cookie cutter.
Heat oil to 350°F.
Cook sopapillas a few at a time, browning on one side, and turning only once. They will puff up.
Drain on absorbent paper and serve with powdered sugar sprinkle.

Cooking tips for Mexican Sopapillas

Mexican Sopapillas originated from the Indian Fry Bread

For sopapillas, they either puff, or they don't puff. Their puff is what makes it a sopapilla - but don't despair as both can be eaten. If your sopapillas are not puffing properly, the temperature of the oil may need to be increased or decreased. Environmental changes in temperature and altitude can make setting the temperature tricky at times.

Using a slotted spoon, turn the sopapilla over to brown the other side. Sometimes this can be difficult, as the sopapilla will want to stay on the side it was on. A little coaxing with your slotted spatula will help this. Hold it for only a moment, and it will adjust to the side it is on.

Sopapillas can be kept warm in a 200 degree F. oven for up to 1 hour. They refrigerate well and can be reheated in a 350 degree F. oven for 10 to 15 minutes before serving.
