I love mexican and mexican-style food. Luckily my husband does too. I probably prepare mexican food three or more times per week. I always have at least two packages of tortillas on hand at a time.

Fish Tacos. These are a favorite in our house.

Fish, any white fish will do
Whisk together:
Olive Oil
Lime juice
Chipotle seasoning or red pepper flake or anything spicy
Marinate the fish in that for as long as you have. Place the fish on a baking sheet, then mix the marinate with panko breadcrumbs and spread on top of the filets. Bake at 450 for about 15 minutes. Then flake the fish apart with a fork to make it bite-sized for the tacos.

Sauce:
2 parts plain fat free yogurt
1 part fat free mayo
more spice

Salsa:
1 can corn, drained or frozen will do
1/2 an onion, diced or garlic
Lime juice
Cilantro

I also like to chop up an avocado and either top the taco with that or mix it into the salsa.

Tomatillo Sauce:

5-6 tomatillos, boiled for about 5 min. or canned is fine
2 cloves garlic, chopped
1 jalapeno, chopped
salt and pepper

Toss it all in the food processor until smooth, add about 1/4 cup water to thin it.

We like it over cheese enchiladas or cheese and black bean enchiladas. Put a spoonful of sauce in each tortilla, then fill and roll the enchiladas, cover with tomatillo sauce and bake for about 20 min at 350.

You can even make mexican food when you don't know what else to make. Take for example the day I had left over chicken and potatoes that needed to be cooked.

Leftover chicken breast diced, tossed with something spicy
2 potatoes diced, boiled for 3-5 min to soften, then sauteed in a little bit of green enchilada sauce (you could use the tomatillo sauce recipe above.)
2 small zucchini diced, also sauteed in a the green enchilada sauce

In the tortilla:
sauce
chicken
zucchini
cheese

Roll them up and top with sauce and more cheese. Bake at 350 for 20min.

Cilantro

For me, it's not mexican food without cilantro. This past summer I even grew my own. It was super easy to take care of and it grows really quickly. I was taking sprigs from the plant a week after planting and it always grew more than I took within a day or two.
