Mie Ayam (Bakmi Ayam)
Some variants of mie ayam are bakmi Bangka, bakmi Medan, bakmi Belitung, cui mie Malang, bakmi rica-rica, etc and of course bakmi Gajah Mada, a famous mie ayam in Indonesia. These variants were created according to region cooking preference/method. Bakmi Medan use a lot of pork ingredients as topping such as cha siu (chinese pork bbq); bakmi Bangka and Belitung use bean sprouts and fish ball; bakmi rica-rica use spicy stir fry chicken as toppings.
In this lens, I would like to share my mie/bakmi ayam recipes. Its simple and easy to make. Give it a try and you will not disappointed. It's perfect for pot luck, picnic, lunch or dinner. Share these recipes with family and friends. Have fun and selamat makan (bon appetit).

Mie ayam main components are: chicken mushroom stir fry, boiled chinese egg noodles, blanched choy sum, chicken broth, garlic oil, bakso (meat ball), pangsit rebus (boiled wonton), pangsit goreng (fried wonton).
Mie Ayam Soup/Broth and Garlic Oil Recipe
How to make chicken broth/soup for mie ayam and garlic oil
100 ml cooking oil or chicken fat
5 cloves garlic, finely chopped
1 tbsp sesame oil
1/2 inch ginger, chopped
Method:
Put all of the ingredients in a pot and cook it on low medium heat until it's fragrant and the garlic is brown. Ready to use.
Note:
Chicken or pork fat will make a tasty garlic oil. To render chicken/pork fat, collect some fats and cook it in low medium heat until the fat turn into crispy chunks. Collect the oil and process further to make garlic oil.
Chicken broth
3.5 quarts water
1 whole chicken
3 cloves garlic (smashed and chopped)
1.5 fresh ginger (smashed)
1 stalk of spring onion or leek (cut into smaller pieces)
1 big onions
2 carrots
1 stalk celery
Salt, pepper, and sugar to taste
Method:
In a large pan combine all of the ingredients. Cook at mediun-high heat. Once it's boiled, reduce to low heat. Remove all of the fat and scum from the surface. Continue to cook for about 1 hour or until the chicken is cooked trough but not dry. Remove and drain the chicken. Cool the chicken and separate the meat from bones by slicing it. Save chicken meat for mie ayam topping or salad. Return chicken bones into pot and simmer the broth about another 1 hour. Remove from the heat and strain. Ready to serve with bakmi.
Note:
I use ready to use chicken broth to save time. Heat the chicken broth in the pot and add ginger, garlic and leek to make it more fragrant and flavorful.

Use your cooked chicken meat (left over from making chicken broth) for easy and tasty mie ayam toppings. Marinate your cooked chicken meat in soy sauce and garlic oil. Its ready to serve as toppings.
Cooking Tools You May Need
Take a look of some cooking tools you may need for making mie ayam.
Chicken Mushroom Stir Fry, Pangsit Rebus and Pangsit Goreng
How to make chicken mushroom stir fry, pangsit rebus (boiled wonton) and pangsit goreng (fried wonton) for mie ayam toppings.
1 lbs chicken breast, diced
1 can (4 oz) button mushroom, sliced
5 cloves garlic, chopped
1 inch ginger, sliced,
4 tbsp dark soy sauce
1 tbsp kecap manis
2 tbsp oyster sauce
1 cup chicken broth
1 tbsp tapioca starch or corn starch
3 tbsp cooking oil
Method:
Marinate chicken pieces with 2 tbsp soy sauce and corn startch for about 1-2 hours. Longer is better.
Heat cooking oil in a wok; stir fry ginger and garlic until fragrant; add marinated chicken pieces, mushrooms, kecap manis, dark soy sauce. Stir until the chicken changes color. Add chicken broth and simmer on low heat until chicken cooked through and absorb the broth flavor. Some chicken broth in the chicken stir fry can be use to season your noodle. Remove from the heat and ready to serve as mie ayam toppings.
Pangsit rebus (boiled wonton)
1 pack wonton wrapper or gyoza wrapper
1 lbs ground chicken
1 tbsp minced garlic
3 tbsp fish sauce or light soy sauce
1/2 tsp white ground pepper
3 tsp garlic oil
1 stalk spring onion, thinly sliced
1 tbsp corn starch
1 egg, beaten lightly
Method:
Combine all of the ingredients, except wonton wrapper, in a bowl and mix well. Wrap and fold 1 tsp chicken filling in a wonton wrapper. Seal the wonton with your dampen fingers. Wrap and fold the wonton until chicken filling is finished. Boil the wonton in hot water until it's cooked throughly and drain. Ready to serve as mie ayam toppings.
Note:
Alternatively, instead of boiling it to make boiled wonton, you can deep fry and turn it into tasty pangsit goreng with great fillings (fried wonton).
Pangsit goreng (fried wonton)
Cooking oil for deep frying
1 pack wonton wrapper
Direction:
Fold wonton wrapper into triangle shapes or half circle if you are using gyoza wrapper. Heat some oil in the pot and deep fry the folded wonton wrapper until golden brown. Drain and cool down. Ready to serve.

Sustitute blanched choy sum with blanched bean sprouts or your favorite greens.
Personally, I like to add fresh romaine lettuce or iceberg lettuce.
How to Prepare and Assemble Mie Ayam
Garlic oil
Chicken broth
Chicken mushrooms stir fry
Pangsit goreng
Pangsit rebus
Bakso (meatball), ready to cook from Asian grocery
Blanched choy sum
Chinese egg noodles or ramen, boiled and drained
Homemade sambal ulek
Method:
Reboil pangsit rebus (boiled pangsit) and bakso (meat ball) in chicken broth. Serve pangsit rebus, bakso and chicken broth in a small soup bowl.
In another bowl, combine 2 tbsp garlic oil, 3 tbsp light soy sauce, a dash of ground white pepper and 1 portion of cooked/boiled Chinese egg noogle or ramen. Mix well. Add chicken mushroom stir fry, blanched choy sum and pangsit goreng (fried wantan) as toppings. Sprinkle some fried shallots and chopped spring onions. Enjoy and do not forget to add some sambals to spice up your mie ayam. Selamat makan.

Kwetiau/kway teow (rice noodle), bihun (rice vermicelli) or angel hair pasta are great substitute of Chinese egg noodle.
Mie Rica
Hot spicy mie ayam topping recipe
Rica chicken mushroom stiry fry (hot):
1 lbs ground chicken or pork
1 can (4 oz) button mushroom, sliced

3-5 tbsp sambal ulek
Method:
Heat cooking oil in a wok; stir fry ginger and garlic until fragrant; add ground chicken, mushrooms, kecap manis, dark soy sauce. Stir until the chicken changes color. Add sambal ulek simmer on low heat until chicken cooked through and absorb the spices flavor. Some chicken broth in the chicken stir fry can be use to season your noodle. Remove from the heat and ready to serve as mie ayam toppings.
Use the same method as mention above ( to assemble mie ayam) to assemble and serve mie rica. Enjoy.
