What is mie goreng ?

Mie goreng or bakmi goreng or bahmi (bami goreng) is Indonesian term for stir-fried noodles or chow mein in American Chinese cuisine. Mie goreng is adaptation of Chinese Chow Mein which is believed to have been introduced by Chinese immigrants in Indonesia and its neighboring countries such as Singapore, Malaysia and Philippines. In Singapore or Malaysia mie goreng known as mee goreng. As one of most popular street food in Indonesia, you can find it everywhere and anywhere, sold by street hawker to fine dining restaurants.

Indonesian mie goreng has distinctive taste and flavor compared to mee goreng (Malay) in Malaysia and Singapore; or chow mein in USA. The application of kecap manis (Indonesian sweet soy sauce) is the uniqueness of mie goreng

Ingredients

1lbs chinese egg noodle
8 oz chicken meat, cut into small pieces
1 cup shreded cabbage
1 cup shreded choy sum
2 red chili, chop
1 1/2 tbsp kecap manis
1/4 teaspoon salt
Tomato wedges, garnishing
Chopped scallion, garnishing
Fried shallots, garnishing

Spice paste:
3 cloves garlic
4 shallots
8 kemiri (candlenuts)

Method

  1. Boil the noodles as per instructions and rinse it in cold water, drain well.
  2. In a food processor, grind the garlic, shallots, and candlenuts into fine paste.
  3. Heat oil in a large wok or deep saucepan over high heat. Add spice paste, tomato wedges and chili, stir fry until almost golden.
  4. Add chicken, stir and cook until the meat is cooked through.
  5. Toss the cabbage and choy sum cook for 2 minutes.
  6. Add noodles, kecap manis, salt. Keep in stirring the noodles into the mixture and cook until all is heated through.
  7. Remove from the heat. Garnish with acar,spring onion, tomatoes, fried shallots and serve hot.

Tips for making authentic mie goreng

  • Do not overcook your noodle to prevent soggy, broken and lumpy mie goreng.
  • Use high heat during during cooking process to produce flavorful mie goreng. If possible use wok and gas stove top or wood fire.
  • Add more candlenuts for more nutty flavor. Candlenuts is available in Asian market. You can substitute candlenuts with macademia.
  • Substitute chinese egg noodles with instant ramen noodles, spaghetti or angel hair pasta.
  • Add tofu, egg, meatball, seafood or other meat protein as you like.
  • Serve mie goreng with acar.
