Mince Pie Recipe
Ingredients
- 680g ready-to-roll short crust pastry
- 450g sweet mincemeat
- 1 beaten egg
- flour
- water
Instructions
1. Preheat oven to 200C / 390F.
2. Cover work surface with flour and put the pastry in the middle. Dust with flour and roll pastry out into a thin sheet.
3. Cut out 12 pastry cups into the bun tin and gently press down into the bottom.
4. Fill each pastry cup with a spoon of mincemeat.
5. Roll the excess pastry to make the lids and sprinkle flour on the work surface. Cut out another 12 pastry cups. Use a smaller pastry cutter and cut the lids.
6. Brush lids with water around its edges and place wet side down on top of the mince pies. Gently push edges to seal.
7. Using a pastry brush, brush the lids with beaten egg.
8. Bake pies for 20 minutes or when pie turns golden brown.
9. Serve hot or cold with an icing sugar.
