Mint Chocolate Chip Cupcakes

Mint Chocolate Chip Cupcake Recipe
Just a little mint will do ya!
The cake part of this recipe is a basic chocolate cake. You can use any chocolate cake mix and follow the box instructions for the batter. After spooning the batter into the cupcake pan, scoop about 1/2 T of mini chocolate chips onto the top of each cupcake. Then bake according to instructions.
Mint Frosting Recipe
1/2 C room temperature butter
1 tsp. vanilla
Dash salt
4 C sifted confectioners' sugar
2 T milk
green food coloring
mint extract
Combine the butter, vanilla and salt. Add sugar alternately with milk, beating until light and fluffy. Mix in 3 drops of mint extract and 2-3 drops of green food coloring (or until you get a fun mint green color).
Spread frosting on cooled cupcakes and top off with an Andes mint or more mini chocolate chips.
