Chocolate Cake with Mint Frosting

One of my favorite sweets is mint chocolate chip. I decided it would be fun to combine that flavor with a cupcake. Top it off with an Andes mint and serve with a scoop of ice cream to create one of the best gourmet chocolate desserts ever. Yum!

Mint Chocolate Chip Cupcake Recipe

Just a little mint will do ya!

The cake part of this recipe is a basic chocolate cake. You can use any chocolate cake mix and follow the box instructions for the batter. After spooning the batter into the cupcake pan, scoop about 1/2 T of mini chocolate chips onto the top of each cupcake. Then bake according to instructions.

Mint Frosting Recipe

1/2 C room temperature butter
1 tsp. vanilla
Dash salt
4 C sifted confectioners’ sugar
2 T milk
green food coloring
mint extract

Combine the butter, vanilla and salt. Add sugar alternately with milk, beating until light and fluffy. Mix in 3 drops of mint extract and 2-3 drops of green food coloring (or until you get a fun mint green color).

Spread frosting on cooled cupcakes and top off with an Andes mint or more mini chocolate chips.

Personally, I’m a huge fan of cheesecake too so it is no surprise that chocolate chip cheesecake is one of my favorites.

Check out the lenses below to find some of my favorite cheesecake recipes. And of course chocolate chip cookies that have a bit of mint flavoring or better yet, cookies made with Andes mints (instead of chocolate chips) are also some of my favorites. And finally, I LOVE mint chocolate chip ice cream and found another great lens to feature in the following group as well.

It sounds yummy. Last week, I made Betty Crocker Fudge Brownies and I added a bag of Andie's mints to the batter. That was good, too! [but I didn't make cupcakes.. just one big bar]
