Moe's Southwest Grill is an American chain of fast casual style Tex-Mex restaurants, relatively new. Moe's was founded in Atlanta, Georgia, in December 2000, by Raving Brands. In August 2007, the brand was purchased by FOCUS Brands. As of the 2007 purchase, there were 360 locations in operation in 35 states.

Moes Steak Quesadilla Recipe
INGREDIENTS:2 4oz sirloin steak
1 C. shredded Chilhuahua white cheese (aka queso quesadilla)
2 slices American cheese
Marinade:
2 large cloves garlic, miniced
2 T chopped parsley
2 oz. olive oil (extra virgin is best)
1 t. crushed red chilies (or a little ground red pepper)
1/4 t. black pepper
1/4 t. salt
Pepper & Onion Medley:
1/4 green pepper, julienne
1/4 red pepper, julienne
1/2 yellow onion, julienne
salt & pepper
Pound steak to even thickness. Combine all marinade ingredients. Place steak in marinade and refrigerate for 2 to 4 hours. Slice peppers and onions and saute in olive oil until al dente. Season with salt and pepper. Saute meat in olive oil over medium heat; cook evenly on both sides to a golden brown color. Heat cast iron skillet on burner over medium heat until very hot. Place cheeses on bottom portions of skillet and cover with pepper and onion medley. Add meat to top of pepper and onion medley. Top with chopped parsley. Serve.

Moe's Southwest Grill Pico de Gallo
Instructions
The first thing any good southwestern meal needs is some savory salsa.
This is a fresh salsa that we serve by the ton (literally) at the restaurant. Without fresh tomatoes you can use a canned high-quality organic whole tomato. Feel free to experiment and add some of your own special touches.
5 ea Tomatoes (chopped)
¼ cup Fresh Cilantro (rinsed well and chopped)
¼ cup Sweet white onion (diced)
¼ cup Red Onion (diced)
1 tsp. Salt
1 tsp. Jalapenos (diced)
½ lime Lime (juiced)
2 tsp. Southwest Seasoning
1. Drain the chopped tomatoes in a colander
2. Mix all ingredients in a large bowl
3. Let sit at room temperature for at least 1 hour to let the flavors combine.
We recommend serving the fresh pice de gallo with tortilla chips - which can warmed in a 250 degree oven ahead of time

Moe's Southwest Grill Guacamole
Instructions
This recipe will yield 1 ½ quarts of fresh Moe's Southwest Grill guacamole
Fresh Avocados, Ripened 6 each
White Onions, Diced 1 ½ cups
Tomatoes, Diced 1 ½ cups
Fresh Jalapenos, diced ½ teaspoon
Cilantro, Chopped ¾ cup
Lime Juice, Fresh 1 ½ ounces
Salt 1 tablespoon

Make sure to mix all ingredients in a large bowl and serve with tortilla chips warmed in a 250 degree oven
Tips: For immediate use, select slightly soft avocados which yield to gentle pressure on the skin. If you are selecting avocados that you plan to use in a few days, buy firm fruits that do not yield to the squeeze test, and leave them at room temperature to ripen.
To pit your avocados, start with a ripe avocado and cut it lengthwise around the seed. Rotate the halves to separate, then remove the seed by sliding the tip of a spoon gently underneath it and lift it out. Next, scoop out the avocado meat with the spoon.
One of the most vexing problems with guacamole is that it spoils very quickly. When preparing guacamole, to help keep the avocado from browning too soon, immediately place the peeled fruit in lemon or lime juice until ready for use. This also adds flavor to your guacamole dish.

Taco Seasoning Recipe
Ingredients:
* 1 1/4 tablespoon chili powder
* 1/2 teaspoon garlic powdertacos 300x200 Taco Mix Seasoning Recipe
* 1/2 teaspoon onion powder
* 1/2 teaspoon crushed red pepper flakes
* 1/2 teaspoon dried oregano
* 3/4 teaspoon paprika
* 1 1/2 teaspoons ground cumin
* 1 teaspoon sea salt
* 1 teaspoon black pepper
Preparation:
In a small bowl, mix garlic, onion power/flakes, fresh cracked red pepper, chili powder (because you need a little kick), paprika and all the listed ingredients.

CHILE CON QUESO DIP
Instructions
Yield: 1 1/4 cups
1 cup Asadero Cheese: shredded (BEST BRAND IS CACIQUE)
4 oz Jalapenos, chopped & drained or 4 oz Poblanos, deveined & julienned
1/4 cup Half & Half
2 Tbsp Onion; finely chopped
2 Tsp Cumin; ground
1/2 Tsp Salt
Heat all ingredients over low heat, stirring constantly, until the cheese is melted.
Service warm with tortilla chips.

I'm a Moe's addict. Seriously, I could eat a Moe's Burrito every single night of the week.
I love their Chicken Burritos and their Veggie Burritos. I alternate between their Joey Bag of Donuts, Triple Lindy, Homewrecker, and Art Vandalay.
I normally order it with black beans, chicken, salsa, guacamole, cilantro, cucumber slices, black olives, and sometimes, fresh jalepenos.
I try to make it at home, but it's never as good. Any ideas how to make the perfect Moe's Burrito?
Instructions
I like eating burritos at Moe's and Qdoba, but it's cheaper to eat at home so I thought I'd try to emulate what they are doing. It's pretty easy, and I have enough leftovers to make very quick meals for the rest of the week.
Quick burritos
Ingredient list:
1 can black beans
Fresh cilantro
Salsa
8 oz Mexican blend shredded cheese
Whole wheat tortillas
1/2 lb chicken (2 breasts)
Vegetable or Olive oil
1-2 garlic cloves
Dried red pepper flakes
2 tbsp Lime juice
Cut up the chicken into small pieces. Pour enough oil to cover the bottom of a small skillet. Add lime juice, red pepper flakes and diced garlic cloves to the oil. Saute the chicken in the oil until it starts to turn light brown. Remove the chicken from the skillet.
I heat up the (drained) black beans in the skillet with the used oil, but you can also heat them in the microwave.
Place an open tortilla in the microwave with shredded cheese on top and heat for 10-15 seconds until cheese is melted. Top with chicken, black beans, salsa, and cilantro, then wrap up into a burrito shape.
I store the extra ingredients separately in the fridge. It takes less than 5 minutes to wrap up a burrito or two.
