    Great information, tips, and recipes here. Mini muffins can be quite deceiving, before you know it you've eaten an equivalent of one big muffin...or two.

    The great title of this lens caught my eye, because I'm not very good in the kitchen. It's nice to know that there are muffins that even I can make! Like you, I enjoy a good muffin with my coffee. One of life's wonderful, simple pleasures. All the best.

    Yummy lens!! Putting it in my fav because there's a few I wannay try (like your peanut butter muffins).
    I love muffins, I usually do double recipes and freeze them. It's handy to have some in the freezer.

    Wow! What a fabulous collection of muffin recipes. I love muffins and make them often. I'm going to make the Apple, Walnut, Cheese Muffins, for sure. Also, I'd like to add this to the featured lenses in my Easy Breakfast Recipes lens.

    Love your lens! Muffins are wonderful, and your recipes look really good. Saw one of your sticky notes and wanted to shed some light on adding eggs at room temp: they whip better and they incorporate with the other ingredients better. All your ingredients should be at cool room temperature. If you take the time to cream your butter and get it soft and fluffy, the last thing you want to do is add cold ingredients so it will seize up again.

    WOW oh WOW, I am so impressed. U can be sure I bookmarked this one. Love muffins.

    Have you tried 'micro muffin in a mug'?

    I whip one up every now and then.

    Just put 1/4 cup milled flaxseed into a mug, add 1/2 tsp baking powder, 1 packet sugar substitute, 1 tsp cinnamon, mix in one large egg and 1 tsp butter. Stir and nuke for 1 minute

    Nice and quick.

    I love muffins! Especially poppyseed & banana nut. Oh, and raspberry walnut, and chocolate chip. Make that Double Chocolate Chip.

    If I ate them everyday, though, I'd have to widen my doors. They're nice as a treat every so often.

    Great lens! I love muffins and I'm always trying new combinations of things--some good, some not so great. It's amazing what a hefty smear of butter can do for a so-so muffin!
