Here, one can savor the Baida (egg) parantha, boti kebabs and the famous Biryani. Dessert delights like Saviyion ki Kheer (Vermicelli cooked in milk), Phirni and Sooji (Semolina) halwa should not be missed too.I visited Mumbai years ago but until now, mention of this place makes my mouth water all the time. Now, there's a city that loves tucking it in. A teeming metropolis that is bigger than most European nations, it makes even New York City feel like a sleepy little town.
Pav Bhaji
At any point in time, millions of locals are out in the streets eating. Even at midnight or especially at midnight, hordes of people crowd at little restaurants and roadside stalls to tuck into spicy chaat and crispy dosas and creamy fruit-flavored kulfis and above all, Pav Bhaji.What, then, is Pav-Bhaji? The pav-bhaji chef (bhaiyya) stands with a huge cast-iron pan in front of him. He is surrounded by bowls of chopped
vegetables and an alarming number of packets of Amul-brand butter. The bhaiyya will start sauteeing the vegetables together with boiled potatoes, spices and enormous dollops of butter and mash the whole mixture into a sizzling vegetable dish.
He will then serve this bhaji with rolls of bread called pav that have been likewise drowned in butter. The final touch: the dish is topped with raw onion slices and lemon wedges. The whole mess is simply heaven on a plate. Or a heart attack on a plate, depending on your point of view. My Indian friend Vejay, who lives in Cebu working as a volunteer for the British organization VSO, gave me this Pav Bhaji recipe in case we want to try it at home:
Savoring the Aga Khan Palace
After savoring this delight, one can then go to the Aga Khan Palace. It is situated in the Yerwada area of Pune, not far away from Mumbai.Sultan Mohammed Shah, Aga Khan III, constructed the palace in the year 1892.The aim behind the construction of the Aga Khan Palace was to provide employment to the people of the nearby areas, who were hit by famine.

Prince Karim El Husseni, Aga Khan IV, donated the palace to India in 1969, in honor of Gandhi and his philosophy. Aga Khan Palace is also known as Gandhi National Memorial because of its close association with Mahatma Gandhi. The palace served as the venue for the famous movie 'Gandhi'. And I promise you, after such an experience of Mumbai food and Indian culture, you would surely come home with the taste of Mumbai still lingering in your mouth. Pav Bhaji

Pav Bhaji is hurried meal for the man in the street. It is a spicy blend of vegetables in tomato gravy and served with pav that is cooked in butter. It is a nice hot meal when you are in a hurry and one that tickles the taste buds. It is easy to cook and is also nutritious and filling. Round it off with a slice of kulfi or a scoop of ice-cream
Ingredients
- 8 ladi pavs
- 4 tbsp butter
- 1 tsp pav bhaji masala
Pav Bhaji Masala Special
For the Bhaji
Recipe

Ingredients
- 1 1/2 cups potatoes
- boiled and mashed
- 1 cup cauliflower
- finely chopped
- 1/2 cup green peas
- 1/2 cup carrots
- chopped
- 1 cup onion
- chopped
- 1/2 cup capsicum
- finely chopped
- 2 1/2 cups chopped tomatoes
- 1/2 tsp turmeric powder (haldi)
- 1/2 tsp chilli powder
- 1 1/2 tbsp pav bhaji masala
- 1/2 tsp black salt (sanchal)
- 4 tbsp butter
- 3 to 4 whole dry kashmiri red chillies
- soaked in warm water
- 4 to 6 cloves garlic (lehsun)
- 1 large sized onion
- chopped
- 4 lemon wedges
- 1 tbsp chopped coriander (dhania)
Instructions
For the bhaji
Boil the cauliflower, peas and carrots till they are soft. Drain out the excess water.
Heat the butter in a large pan, add the onion and capsicum and sauté for 2 minutes. Then, add the prepared chilli-garlic paste and sauté till the onion softens.
Add the tomatoes and simmer till the oil separates.
Add the turmeric powder, chilli powder, pav bhaji masala, black salt and salt and cook for 2 to 3 minutes.
Add the boiled vegetables and potatoes and mash thoroughly using a potato masher, adding ½ cup of water if required.
For the pav
Slice each pav into 2 horizontally. Apply a little butter to each side and sprinkle with a little pav bhaji masala, if desired.
Heat a large tava and cook the pav on both sides till the pieces are lightly browned.
How to proceed
Serve the hot bhaji on 4 individual plates and top with the onion and coriander.
Serve with the hot pav and lemon wedges.
Tips
Pav bhaji masala is a spice blend which is readily available at most grocery stores.
