Some Personal Recipes

 

In this lens, I would like to share some of my own personal chinese recipes. I'm no professional cook, heck, I'm not even an expert. But at least people I cooked for said they are really delicious. So here goes nothing!

P.S. This lens will always be work-in-progress. I'll constantly add new recipes when I have the chance. 

Simple Porridge 

Simple Porridge

Ingredient
1 cup White Rice
6 cup water
Salt and white pepper for taste

1.Rinse the rice

2.Put water in a large saucepan, bring to boil

3.put the rice in, bring to boil

4. Turn heat to medium and keep boiling for another 20-30 minutes, stir occasionally

5. cover with lid but leave a little gap for steam to get through and simmer it on low heat until the rice grain is broken and the porridge becomes pasty.

6. season salt, sesame oil, white pepper and serve

You can make various flavours of porridge, such as chicken porridge, beef with choy sum etc.

Beef with choy sum porridge 

Ingredient
1 cup white rice
6 cup water
200g beef mince
200g choy sum
Salt, sesame oil and white pepper for taste

1. Rinse the rice

2. Marinade beef mince with some soy sauce and dark soy sauce

3. Cut choy sum into 1cm pieces

4. Put water in a large saucepan, bring to boil

5. put the rice in, bring to boil

6. Turn heat to medium and keep boiling for another 20-30 minutes, stir occasionally

7.cover with lid but leave a little gap for steam to get through and simmer it on low heat until the rice grain is broken and the porridge becomes pasty.

8.Add the beef mince to the porridge, cook until beef turn brown

9. Add choy sum to the mixture, toss well

10. season salt, sesame oil, white pepper and serve

Simmered chicken wings with dried mushroom

Simmered chicken wings with dried mushroom 

Ingredient
1 kg middle wings
2-3 dried black mushroom
5 cups water
2 sliced ginger
2-3 cloves of garlic minced
2 tbsp shallot diced
4 tbsp Soy sauce
2 tbsp Dark soy sauce
2 tbsp olive oil

1. soaked dried mushroom with hot water until soft, sliced

2. place the chicken wings horizontally and cut it into half

3. Heat the olive oil and garlic in a large deep pan or wok over medium heat until fragrant

4. At the same time cook water, ginger and mushroom in a separate saucepan until boil

5. Add middle wings, soy sauce, dark soy sauce into the pan and stir fry for 2-3 mins

6. Add the boiling water into the pan, until just cover the wings

7. simmer for 40-60 mins until sauce reduce by ¾.

8. Sprinkle shallot just before you serve.

Beef brisket in chu hou sauce 

Ingredient
1 kg beef brisket
600g turnip
3 tbsp chu hou sauce
3 slices ginger
3 sprigs spring onion, finely chop
2 clove garlic, minced
2 clove shallot, sliced
1.5 tbsp shaoxing wine
2 tbsp olive oil

Seasoning 1
10 cups water
38g rock sugar

Seasoning 2
½ tsp salt
½ tsp sugar
1.5 tsp soy sauce
1.5 tsp dark soy sauce
1.5 tsp oyster sauce
Sesame oil
Ground white pepper
4 cups the liquid from simmering beef brisket

Thickening sauce (mix well)
1 tbsp water
1 tsp caltrop starch

1. wash the beef brisket (don't have to cut)

2. Heat the olive oil, ginger and shallot in a deep pan, until fragrant, sizzle wine

3. Add the beef brisket and seasoning 1, simmer for 30 mins in low heat

4. Turn off the fire for 15 mins (don't open the lid)

5. Turn on the fire for another 30 mins and turn off the fire for another 15 mins

6. leave to cool, cut into pieces and reserves the sauce

7. cut turnip into wedges, stir fry until fragrant

8. heat wok and add oil, stir chu hou sauce, garlic, ginger and spring onion.

9. add beef brisket and sizzle wine.

10. add turnip and seasoning 2

11. cover and simmer for 20-30 mins

12. Thicken with caltrop starch solution

13. Sprinkle with some spring onion and serve

Deep fried Chicken Drumstick 

Ingredient

6 Chicken Drumstick
3 tbsp Soy sauce
2 tbsp Spiced salt
2 tbsp Dark soy sauce

1.Marinade chicken drumstick with soy sauce, spiced salt and dark soy sauce for at least half an hour.

2.preheat deep fryer to 180 degree

3.Deep fry chicken drumstick for 10-15 mins

Spring Roll 

Ingredient
12 sheets spring roll wrappers
200 g pork mince
1 medium carrot
2 pieces celery
2 dried black mushroom
1 egg, beated

Seasoning 1
½ tsp sugar
1 tbsp soy sauce
1 tsp caltrop starch
1 tsp oil

Seasoning 2
2 tbsp water
2/3 tsp salt
2/3 tsp sugar
2 tbsp oyster sauce
Ground white pepper
Sesame oil

1. marinade pork mince with seasoning 1

2. soak dried black mushroom until soft, sliced

3. wash carrot, celery and shred separately

4. heat wok and add oil, stir fry pork, dried mushroom, carrot and celery

5. until cooked, add seasoning 2 and stir fry to make the fillings

6. remove and leave to cool

7. Divide filling into 12 equal portions

8. wrap in spring roll wrappers and seal with egg.

9. deep fry until done

10. serve with Worcestershire sauce

Simmered spareribs in Zhenjiang sauce 

Seasoning
1 tsp salt
3 tsp soy sauce
3 tbsp dark soy sauce
4 tbsps Zhenjiang vinegar
1.5 tbsp shaoxing wine
5 tbsp sugar
10 tbsp water

1. chop spareribs up into 1.5 inch x 1.5 inch square, wash

2. place bamboo mat in the casserole

3. pour in seasoning and bring to boil

4. put in spareribs

5. simmer over low heat for 35-40 mins or until the sauce has thickened

6. turn off the stove and cover for a while

7. serve

Sauteed porkchop with onion 

Ingredient
4 piece of porkchop with bone
1 onion, shredded

Seasoning
1 tbsp shaoxing wine
1 tbsp cormflour
½ tbsp ginger sauce
3 tbsp soy sauce
¼ tsp salt
1 tsp granulated sugar
2 tsps chicken powder

1. marinade porkchop with seasoning for 30 mins

2. fry porkchop over medium heat until golden brown

3. remove and cut into small chunks

4. heat wok with 2 tbsp of oil, add salt and onion and stir fry

5. return porkchop

6. Add 2 tbsp of water to the marinade. Stir well and pour it into the wok

7. cover the wok for a while and serve.

Mashed Potato With Broccoli 

Baked Broccoli

Ingredients
2 heads broccoli
150ml cream sauce

1. Cut one head of broccoli into pieces and put it into a boiling water until done. Put into a blender with cream sauce and bend it.

Actual Dish

Ingredient
200g Mashed potato
Mozzarella cheese
2 strips of bacon
1/2 teaspoon of minced garlic
A little butter
100ml baked broccoli

Seasoning
1 teaspoon of salt
1/2 teaspoon of chicken bouillon

1. Heat up butter. Stir fry minced garlic and strips of bacon till fragrant. Add the remaining head of broccoli and stir fry, cooking over low heat. Add seasoning and and continue stir briefly briefly. Pour half of the blended broccoli sauce in and bring it to boil. Remove heat.

2. Place mashed potato in an oven safe container and form a round circle. Place broccoli in the middle and pour the remaining half of the broccoli sauce on top. Sprinkle cheese and put it into the oven preheat to 200 degrees celcius for 8mins. Serve.
