The Only Dessert My Dad Loved More Than Vanilla Wafers - Banana Pudding With -
The photo is one I scanned from a very old display my dad created in the 1960s when he was president of Jackson's Cookie Company. He was no artist or advertiser, but back then for a regional bakery and distributor like Jackson's Cookies, it worked.
Everybody probably knows it takes vanilla wafers to make this favorite family dessert. But, my dad taught me never to underestimate how much really good quality vanilla wafers could transform tasty banana pudding into fantastic, mouthwatering, delectable banana pudding.
So, I suggest to buy the best you can find. Bananas have to be just right, too. Not too ripe and certainly not too green. He insisted the pudding be rich. But, in his estimation, vanilla wafers make the dessert.
Recipe For My Dad's Banana Pudding

3/4-Cup sugar
3 Tablespoons cornstarch
Pinch of salt
2 1/2-Cup milk
2 eggs, beaten and set aside
1 tsp vanilla extract
2 Tablespoons butter
3 to 4 ready-to-eat bananas
Vanilla Wafers
Mix sugar, cornstarch and salt in a 2-quart saucepan
Add milk, stir
Heat this combination over a moderate burner temperature, stirring constantly, until mixture coats the spoon.
Pour or dip approximately 1 cup of the hot mixture into the beaten eggs and stir quickly by hand or with a mixer.
When this egg solution is evenly blended pour it all back into the milk mixture and continue stirring.
When soft bubbles indicate a slow boil reduce heat to lowest simmer and let pudding thicken. Stir often but not constantly.
Remove from heat. Add vanilla and butter and let stand at room temperature for about an hour.
Cover the bottom of a bowl or serving dish with vanilla wafers then cover the cookies with sliced bananas. Pour on half the pudding before adding another layer of vanilla wafers. Then, pour out all the pudding and top the dessert with a final layer of bananas and cookies.
Serve with whipped cream.

Let me know if you did and if you've ever made banana pudding or other dessert using this or other flavors. Such as chocolate chip, sandwich cookies. A lot of my friends asked for Jackson's Oatmeal Cookies.

- Stove top cooked banana pudding with vanilla wafers is by far the very best! I do believe this is the same recipe my mother uses. If not exact, it is very close.
