Homemade Italian Pizza, Calzones and More!
Of course I do not make my sauce homemade as grandmother did. Goodness knows she would slap my hands if she were still alive, but I believe I do pretty good and she would be proud of the way I cook. One of the best things about making a homemade pizza is the fact you can ADD anything to it that you want too.

The Pizza Crust
Try to use a bowl with a tight fitting lid.Add:
1 cup of warm water
1 pack of yeast
1 tablespoon of honey
3 tablespoons of olive oil
1/2 teaspoon oregano
1/2 teaspoon parsley
1/4 cup of parmesan cheese
1 cup of white all purpose flour
Use a whisk and mix together.
Slowly work in two additional cups of flour making sure the dough is not real sticky and not too dry. If by chance the dough seems dry add a little more warm water. Cover the bowl and allow it to rise 30-45 minutes.
This is the dough that I just made and used for my calzones listed below.

Tomato Sauce
Okay, let's be honest the easiest thing to do is open up a can of organic no salt added tomato sauce and spread it over the dough. OH WAIT, WE NEED TO FINISH THE PIZZA CRUST!!!Finishing the pizza crust:
After 30-45 minutes, dust your counter with some flour and knead your pizza dough. You want to make sure it is not sticky. Just keep working with it until it feels right. Take your rolling pin and roll it out to whatever thickness you want your crust to be. I like my thick so that is how I do mine.
Lightly spray your pizza pan with olive oil, lay the dough on it and spray the top of the crust with olive oil. Sprinkle it lightly with pepper and a little parmesan cheese. Put into the oven at 375 degrees for 10 minutes.
Back to the tomato sauce:
If you do not want to use can sauce, take some garden fresh tomatoes and quarter them. Lay them in a pan that has been lightly sprayed with olive oil and drizzle the top with olive oil. Place in the oven and cook for approximately 20 minutes or so.
When you take them out of the oven, let them cool for a little bit and remove the skin (which should pull off pretty easy) place the tomatoes in your food processor. Add some pepper, a pinch of sugar, a pinch of red peppers, oregano, parsley and onion powder. Chop until it is smooth.
Take your pizza crust out of the oven and spread roasted tomato mixture over the crust, add whatever you like, turkey pepperoni, chicken, mushrooms, sliced onions, spinach, pineapple, sliced Canadian bacon, come on use your imagination!!
Next put on the cheese!!! I use low fat Mozzarella, but have also used a great Italian blend cheese before. Sprinkle a little parmesan cheese over the mozzarella, sprinkle some thinly sliced basil over the top and cook for additional 20 minutes or until cheese is good and melted!!
Finally, it is time to ENJOY!!!!

Meatball Calzones
Meatballs:
Use 1 pound of turkey or 95% lean ground beef
1 egg white
1 cup or 1/2 cup of chopped spinach
1/2 cup no sodium bread crumbs
pepper
parsley
oregano
garlic powder (not garlic salt) or use fresh garlic which would be better
Mix everything together real good and roll out the size meatballs you want. Preheat a skillet with olive oil and cook the meatballs until they are done. I always cook mine on low.
Adding the sauce..
The choice is yours which kind of sauce you want to use. I have one listed above or here. Since you are using a very lean ground beef or turkey and cooking with olive oil, you will not have a lot of grease so I leave mine in the pan and add the sauce with the following ingredients. Simmer on low for a few minutes.
1 can organic no salt added tomatoe sauce
oregano
parsley
onion powder
pepper
Use the pizza crust recipe above..
If you like salt in your diet please feel free to add it to taste. Due to health issues I do not add it to my recipes.
